This Mediterranean character is also expressed in the menu, in which the flavors reflect the whole region surrounding the Mediterranean Sea, including North Africa and the Middle East. You won’t eat a traditional starter and main course at Trouw, but you will share all kinds of small tapas and medium sized dishes with your table companions, with a starring role for vegetables of the season. All these dishes can be combined with each other into a highly nutritious meal, and possibly accompanied by fresh fish or meat, usually prepared on a charcoal grill.
