Homemade hot sauce with a tip for making it FANTASTIC

Mine were anything but memorable. Then I met Pedro. He arrived for retreat with a group of Hispanic men. They provided the retreat leader. We provided the food. Soon after arriving, Pedro came to the kitchen asking where to store his half gallon of hot sauce. Pedro was older than the other men, most of whom addressed him as “Tio,” a Spanish term of endearment literally “uncle.” By the close of the weekend Pedro and I had become bonded. “I’ve not told this secret before,” he assured me. Depending on your palate and your heat tolerance you may be more interested in the mildly hot peppers like the Santa Fe or the rellano-type pepper. With any variety, always test for heat. However, our stock consumption is a bit lower during the hot summer months, which results in a bit of a build up in my freezer. In theory, this is awesome, because once the weather cools down, we use up stock in the blink of an eye. In reality, it’s a bit trickier than that though. Late summer is when our freezer fills up to the brim with garden produce, and it is also when we usually get our beef share. Bakto Flavors. How to Make Homemade Extracts - Vanilla, Lemon and Almond. Homemade Doritos Seasoning

That’s how this recipe came about. I wanted to come up with a tasty fun new seasoning for a batch of kale chips that I was working on. It may have originated in Egypt and I understand that dukkah began as a pack-and-carry food for camel drivers. After a day or two in the desert, the flatbread is hard and tasteless. Dip it in olive oil and then in dukkah and, voila! , you have a tasty and nutritious meal. Dukkah is also known as dukka and duqqa. The dukkah flavor is complex and satisfying, not sharp or hot.
