Shrimp Scampi Dip. Shrimp scampi has to be one of my favourite pasta dishes; not only is it super quick and easy to make but shrimp and pasta in a garlicky white wine, lemon and butter sauce is just so irresistible!

When I came across the idea of a shrimp scampi dip on Foodie Crush I knew that I would have to make it and it was perfect for a New Years Eve party appetizer! I am totally addicted to hot melt-y cheese dips so I could not pass up on the idea of taking all of the flavours of shrimp scampi and placing them in a melted cheese dip! This dip starts off by cooking some shrimp in butter along with plenty of garlic followed by the white wine and lemon juice before mixing it all up with plenty of cheese and baking it until it is all melted, bubbling and golden brown.

Not only is this dip super easy to make but it will also be the talk of the town at your party, though it will disappear quickly so you might want to make a double batch and hoard some for yourself! A while ago I heard about a new take on the salsa, an avocado and roasted tomatillos salsa which sounded good and I have just been itching to try it ever since. With the avocados in the salsa it kind of sounded like a cross between the salsa verde and guacamole which is another dip that I am completely into. This recipe is pretty much as simple as taking the recipe for the roasted tomatillo salsa and adding some mashed avocado. For my particular use however I also wanted to try to reduce the amount of moisture in the salsa so I threw it into a sauce pan and simmered it to reduce the liquid a bit before adding the avocado, lemon juice and cilantro. The avocado worked quite well in the salsa verde mellowing out the spicy heat of the jalapeno pepper all the while adding an amazing creamy texture. Tip: Tomatillos freeze well so freeze some in the summer when they are in season.

For Cinco de mayo I had to make a batch of one of my favourite Mexican dishes, guacamole, and I figured that I would take the opportunity to update the photos for this recipe! At it's base guacamole is mashed avocados and from there you can start adding more ingredients like lime juice and salt. The lime juice adds a brightness to guacamole and helps prevent the avocados from turning brown and the salt balances the sourness of the lime juice. For the remaining ingredients I like to keep my guacamole nice and fresh and simple by using tomatoes, onions, jalapeno peppers and cilantro. Guacamole is very versatile in that it can be enjoyed by itself for dipping or as an ingredient in many different recipes!
