By Jeannette Ordas of Everybody likes Sandwiches I wanted to make my favourite chocolate chip cookies for a friend's birthday but was all out of chocolate chips.
I know. Zero chocolate chips + me = serious sad face. But I didn't get bummed for too long, because I found a cookie recipe that called for coconut and lime. How summery and delicious does that sound? These cookies were pretty simple to put together though I think next time I make these, I'll be adding in more lime juice or a few drops of lime oil extract. To make the toasted coconut, take regular unsweetened coconut and place it in a small skillet. Once baked up, these result in a very soft and chewy cookie. Coconut Lime Chewy Cookies 2 3/4 cups all-purpose flour 1/2 cup unsweetened toasted coconut 1 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon salt 1 cup salted butter, softened* 1 1/2 cups white sugar 1 egg 1/2 teaspoon vanilla extract zest from 1 lime 3 tablespoons of fresh lime juice 1/4 cup sugar for rolling cookies.
Guinness Chocolate Pudding or "Chocolate Guinness Goodness" Everywhere I look food bloggers are preparing celebratory dishes for St. Patrick's day in the same way, with Guinness! While I claim to love everything, (it's a growing problem) I have to say that extra dark stout beers are not high on the list. The last dark beer I tried was on the aforementioned (previous post) Scotland trip, and I didn't even drink half of what was given to me. It was good, but so filling! The recipe comes from epicurious.com. The finished dessert mimics a frothy pint of stout.
I like the ease and simplicity of this recipe. The cream and stout are cooked together in a sauce pan until slightly bubbly, but not boiling. The chopped dark chocolate is then added to the hot cream and stout mixture. One thing that I altered slightly was the topping (or "froth") that consists of freshly whipped cream and a Guinness reduction. The Guinness reduction is really quite beautiful to look at. Ingredients Directions To me, the chocolate pudding portion tastes much like a brownie. Healthy Cookie Dough Ice Cream. Is there anyone in this world who doesn’t love cookie dough ice cream?
Melty vanilla ice cream. Soft, unbaked cookie dough. All packed into one incredible scoop. What’s not to love? At least, that’s what I was thinking yesterday as I devoured this cone. My favorite part of the day is early in the morning when the sun is just starting to rise. The house is quiet, the streets are empty, and the phone is silent. The other day, I woke up early. For that small portion of time between darkness and sunlight, it was just me in my kitchen. I brewed a cup of coffee, watched the sun come up, and started to gather the ingredients for these scones.
I have been eyeing this recipe for a few weeks now. A while ago, I started to look for a good scone recipe and I kept coming back to this one. This is my kind of scone- not too sweet, rustic, and hearty. If you don’t have whole wheat pastry flour, all-purpose flour will work. I brought some over to my neighbor who wasn’t feeling well. It's difficult not to pass any neighborhood flower shop or overlook the multitude of Pinterest boards showcasing the adorably trendy succulent plant. I get it... They're small, extremely easy to maintain and crafty terrariums have just about replaced all mini zen gardens. These water saving plants (did you know cacti are succulents!) Are so popular right now, I had to scour four different plant shops to find some to model these cupcakes after. I also kept things simple with frosting. Is there anything graham cracker crumbs can't solve!? Roll out the green fondant to 1/8-inch thick to make the succulent leaves.
I had purple edible petal dust to highlight the tips of the succulent leaves, but you could easily use cocoa powder instead. Can you tell which one is the plant and which one's the cupcake? Poppy seed lemon cake. A whopping eight years ago, I joined a friend and her family for an afternoon at the then newly-opened Neue Galerie, which seriously, you should check out some time when you’re in my city. (Look at me, playing tourist guide!) The early 20th century German and Austrian art is fantastic but even more wonderful is the Cafe Sabarsky within which models itself after a turn-of-the-century Viennese cafe. But really, I don’t want to talk about the Kadinskys or the Kavalierspitz today, I want to talk about this cake. That I had there that day. I wasn’t even the one who ordered it. I have spent nearly a decade yammering about this cake to everyone who had the misfortune to tune in.
