COCONUT FUDGE. COCONUT FUDGE 1/4 cup virgin coconut oil * 2 tablespoons natural peanut butter, brought to room temperature 2 tablespoons cocoa 1/2-1 cup granular Splenda or equivalent liquid Splenda, to taste (see my comments) In a small bowl, microwave the coconut oil about 30 seconds on HIGH to melt.
Whisk in the peanut butter then the cocoa. Add the Splenda to taste. I recommend starting with about 1/4 cup and add more if you think it needs it. Pour into a small nonstick foil-lined container and freeze until solid, about 20-30 minutes. Gently cut into squares with a thin, sharp knife. PORTOBELLO PARMESAN. PORTOBELLO PARMESAN 2 portobello mushroom caps Salt and pepper, to taste Pinch garlic powder 2 tablespoons spaghetti sauce 2 ounces mozzarella cheese, shredded, 1/2 cup 1 ounce freshly grated parmesan cheese, 1/4 cup Fresh parsley, chopped, optional Very gently scrape the gills off the underside of the mushroom caps with a spoon and cut off the stems to make them level with the underside of the mushrooms.
Brush the mushrooms with a damp cloth to clean them. Place the caps stem side up on a foil-lined baking sheet. Bake at 400º 10 minutes. Turn the caps stem side down and bake another 5 minutes. But with oodles of heavy cream and cheese, classic Alfredo sauce isn't really Paleo friendly. Even if you could give two shits about Paleo, I guarantee you think of Alfredo sauce as "fat food," in which case, you should all be relieved to hear that the unclassiest of sauces can now be waistline and tastebud friendly with the help of my all-time favorite Paleo ingredient: Cauliflower. I know some of you Paleo peeps can be all over the map when it comes to cheese, but look, there's cheese in this recipe, okay?

It's like eating pizza without the crust. I can't gobble them up fast enough. I only make them when there are fresh home grown tomatoes,though. Then I make them almost every other day! Sometimes just for a quick lunch on its own, and often to have with a meal as a side. My mom would often just sprinkle some salt and whatever cheese she had on hand on top of tomatoes and then broil them, but I prefer this recipe that I found several years ago in a Taste of Home magazine, which has always been my number one source for good recipes. I love summer and all the fresh produce available..I get excited every time I go the Farmers Market to see what I can find! When I want something to snack on, I want it NOW. Let me start off by saying, these tasted very good. And...they were fairly simple to make. And....they are a great, healthy alternative for a snack. And... they freeze well so can be on hand for those cravings. Now...that being said....I probably won't be making them again anytime soon. Why? Well...let me show you a photo... This is my mini muffin tin in the aftermath of these pizza bites. I had to scrub out 24 tiny little circles and 12 tiny little squares. I mean...S-C-R-U-B... Not cool. The cauliflower mixture really cooked right onto the pans. Oddly enough, the pizza bites popped right out the pan (after I ran a butter knife around the edge of each one) and held their shape great.
I don't know that paper liners would work.... Hmmm....any ideas? Cauliflower Pizza Bites.
