When the mixed box comes out, I tend to want to spread my creamy cheeses on the digestive biscuits which, lets face it, are more cookie than cracker. However, I always circle around for two or three of these raintree crisps when they are out for free samples down at the grocer's. I think I like them because they are mostly nut and dried fruit held together by a negligible amount of cracker. February's Daring Challenge to make crispy crackers offered us the raintree crisp recipe from Dinner with Julie. I immediately crossed out raisins and pencilled in cranberries because there's just something about raisins that makes me sad.

Two things: 1) The recipe suggested that I slice the loaves as thinly as I could, but that was apparently too thin to weather the suggested baking time and oven temperature, as I had some burning issues. And most often that juice will contain a pretty hefty amount of carrots, for color and flavor. My compost pile was turning fairly orange from the excess pulp, so I decided to try other ways to use the pulp in my kitchen first. I figured I could substitute the pulp in a recipe that called for grated carrots, which is what I did in the following recipe with a few other adjustments. Carrots have been a regular feature in my CSA box the past few weeks, as they are in peak season and boasting maximum sweetness and crunch. My niece and nephew came over and they love food as much as I do, so it was a great day to try something new. I've saved it a time or two to make crackers, or to throw into a smoothie later in the day, but 99% of the time I throw it away. A few weeks ago as I was cleaning out the pulp catcher it dawned on me that the flavor combo of that morning's juice would make a fantastic muffin, so I set out to experiment with juice pulp muffins. The particular flavor of juice I made that morning was orange-carrot-ginger; one of our favorites, but rarely served because we like to get our greens in our juice in the morning. To make enough juice for 2 adults and 2 kids I use 3 navel oranges (peeled) , 6 carrots (unpeeled but with ends chopped off), and about 1/2 inch of ginger root.

To get the pulp for the muffins I juiced the carrots and oranges first, collected the pulp in a separate container, and then juiced the ginger. These muffins turned out wonderful. Day Two (2)...a little of this, too much of that. I am far too excited about posting today.

Why? Because I came up with a really cool idea for using up the pulp from juicing as opposed to putting it in the trash or trying to bake with it. ‘Tutti Frutti’ sorbet (juicer pulp) Make this sorbet by using the pulp that we normally throw away when we use our juicer.

In other words, make this sorbet using that ‘stuff’ that collects behind your juicer and that gets thrown away without a second thought. We’re actually throwing away precious fruit pulp: an ingredient that can be used in various, delicious ways. One easy example is this sorbet. Ingredients. Frankly, I understand that when you look at all of that vegetable matter, you think, “I can’t possibly throw this away!” But seriously, what you are looking at, it is just the plant matter that is left over from the fruits and vegetables after you extract the nutrients and flavor out of them. It is almost all fiber with hardly any nutrients. My leftover juice pulp normally ends up feeding the compost pile.

Feel free to add your own recipe at the bottom of the page :) Make cookies with your leftover juicer pulp. Cookie pulp recipes are a great way to hide the pulp! You can probably add a few tablespoons of juice pulp to any of your cookie recipes (using your judgement, of course!). Here are some that seem to work well incorporating in some pulp.

While not super heathly, if you're gonna make them, there here are some recipes for you. Keep in mind you can substitute gluten free flour, egg replacer or dairy substitutes if needed.
