Vegies and Fruit: Green Cabbage/span>Tart Apples, such as Granny Smith or PippinRed Onions.Cut into quarters or eighths and roast in the pan with the pork. Holy-Food - Butternut Squash Potato Salad. Peel and boil white potatoesMeanwhile, peel, slice and bake the squash for approximately 20 minutes at 400. The goal is to have cooked but still firm squash, similar in texture to the potatoes. I used a Victory Farms Butternut for this recipe. It had good texture and peeled easily. I put a couple of T of water in the baking dish and covered it. When the white potatoes are cool enough to handle, cube and dress with sunflower or other light oil, cider vinegar, and salt and pepper to taste. Add a small red onion [or ¼ of a large red onion,] thinly sliced.When the squash is cool, cube and toss with the other ingredients.Sprinkle with walnuts just before serving. Grilling Experiments 2 Grilled Lemon Ginger Eggplant plus Grilled Ginger Lime Sweet Potato with Red Onion with Garlic and Lime. Bonus cold salad from leftovers! Eggplant 2 large eggplants thoroughly washed and trimmed. Slice into ½ inch slices lengthwise. (See photo) If you find your knife slipping off the eggplant, use a serrated knife. As it was, I ended up with quite a bit of fish, in this case Tilapia. I lightly oiled a pan with canola oil, tossed in a few springs of fresh thyme, put the lid on the pan and let the fish cook. Sitting in the breezy shade while my daughter visited a class at her future college, I had the opportunity to remember when I thought this day would never come. The phone call no parent wants, the ambulance driver telling me to which hospital he would shortly be transporting my daughter, came in October of her freshman year of high school.
