Soft Pretzels with Jalapeno Cheese Sauce. Well the Superbowl didn't have the outcome that I was hoping for, my team had too many turnovers, I wasn't a fan of the halftime show and the commercials weren't anything exciting, but the food was good at least. For me these soft pretzels were the highlight of the night. I debated between a couple different recipes - one from Baking Illustrated and one from Alton Brown. Although similar the main differences were in the type of flour and the type of sweetener.

The Baking Illustrated recipe used bread flour which has a higher gluten content and therefore creates a chewier dough. Pretzels are supposed to be chewy so I decided to stick with the bread flour. The Baking Illustrated recipe also used honey and after reading their explanation, I decided to go with that - it also meant I didn't have to open a package of brown sugar for a couple tablespoons - so it made it a fairly easy decision. I understand if you do… truly… guess we won’t be hanging out at the mall together anytime soon then, which is a bummer. I bribe my kids to be good at the mall with the promise of Pretzel Bites once we are done. As long as we can get the pretzel bites at the end, I’m a happy camper. Now I don’t have to go to the mall to get pretzel bites anymore. Recipe: Homemade Pretzel Bites for the Bread Machine (from All Recipes.com) 1 1/8 cups water (70 to 80 degrees F)3 cups all-purpose flour3 tablespoons brown sugar1 1/2 teaspoons active dry yeast2 quarts water1/2 cup baking sodacoarse saltmelted butter – not in the original recipe, but a must for mall food pretzel like experienceIn bread machine pan, place the first four ingredients in order suggested by manufacturer.

PRETZEL BITES – Parmesan or Cinnamon and Sugar with glaze. Do you need a perfect snack for the big game? These Pretzel bites will hit the spot for sure. You can make a combination of Parmesan bites with a Cheese dip or Cinnamon and Sugar bites with a Vanilla glaze for dipping. I’ve finally used up my supply of Rhodes Roll dough . . . until I buy more. It’s quite nice to have on hand when you need it. If you have some hanging around your freezer, you can whip these up in a jiffy. Simple . . . CINNAMON and SUGAR PRETZEL BITES Take a Texas size Rhodes roll that has been thawed.

Roll it out in a four inch rope. Cut in four sections. I got tired of this method. so I simplified even more. Take your roll, and cut horizontally and vertically. You have four pieces. Homemade Pretzels. I don't get to the mall nearly as much as I use to, but when I do, one of my favorite things to do is to get a soft pretzel while shopping. Soft pretzels are one of those little delicacies in life that I'm not sure I can get enough of. So when Lee told me that he was going to make soft pretzels for the Super Bowl, I was psyched! We did a test run the Friday before and we ate the whole batch in one night. The night of the Super Bowl, they didn't last long either.

Here's what you need: Mix the melted butter, warm water, yeast and sugar in a mixer with a dough hook. When the yeast is ready it will look like this: Mix in the salt and flour mix in batches on low speed until combined, then on medium speed until the dough forms a ball and comes away from the bowl edges. Take the dough ball out onto a flat surface and knead for about 2 minutes. In a bowl, put some oil and rub all over. Place a towel over your dough and place in a warm place for 1 hour to let rise.

You know…the ones for Auntie Anne’s, or Wetzel’s Pretzels? You just can’t help it, right? You can smell that darned cinnamon sugar and butter wafting over from like 100 feet away. Well try these at home, and you’ll never buy those mall pretzels ever again. Start by making a simple yeasted dough, and shape it into a ball. Let the yeast work its magic and create these gorgeous bubbles. Sometimes I just stare at the dough because it’s sooooo prettyyyyyy… Divide up the dough into pieces, and roll each into a long rope.

Shape into pretzels by looping the rope through. Sprinkle each pretzel with coarse sea salt and send them into the oven. Bake until golden and puffed, then brush with butter. I have read through the comments and appreciate all of them. I am not sure if I originally recorded my measurements inaccurately or what happened. Please know, I am not a professional baker and do my best to experiment and record my recipes with three amazing, but often distracting, children at my heels.
