Cinnamon and Vanilla Walnuts.

These nuts are slightly sweet and salty and laced with cinnamon and vanilla.

Cinnamon and Vanilla Walnuts

I’ve made candied nuts quite a bit in the past, but I love this newest recipe. It’s not as sweet, so I like them better for snacking on or for putting in salads. They add just the right amount of sweet and saltiness to a salad. Yum! This method of using an egg white coating adds a very nice crunchy texture. This simple recipe is perfect for doing with children. Of course, if you wanted a sweeter version, you can easily up the sweetener, up to double. 1 egg white 2 teaspoons of cinnamon 1 teaspoon of vanilla extract 1 teaspoon of salt 1/3 cup of rapadura, sucanat, maple sugar, or palm/coconut sugar 2 1/2 cups of walnutsPreheat the oven to 300 degrees (the rack should be in the middle of the oven).

We promised to share one more recipe, and here it is — a tried and tested, easy, terrifically yummy recipe for homemade crunchy granola bars. I realize that we already shared one granola recipe from Emily with you; she made homemade granola during the tour of her kitchen. But at the risk of making you think she only cooks granola (she most emphatically does not; every other recipe in the book is non-granola, I promise), I just had to share this one.

Homemade granola and protein bars are perhaps the single biggest recipe request we get from our readers. You want fast, easy recipes for breakfast on the go. I’m talking about a handful of something fabulous every 30 minutes or so. I keep telling myself it’s because I get grumpy if I don’t eat, but really I just like snacking. There’s nothing wrong with that right? Granola is one of those snacks that I always have on hand. This recipe is hands down my all time favorite granola recipe. Here’s the step by step…. First we are going to start with a big bowl of oats.

Chop up some raw cashews into rough pieces and throw them into the bowl of oats. Chop up some almonds too, and add them into the mix. Next comes the shredded coconut. Next, add a pinch of salt. Well, a combination of a miracle and my genius (ha) computer skills brought a few of the photos back to life. Don't ask me how I found them or what skill set I used to convert them from .NEF to .JPEG files but I did it. Dear blogging gods, I thank you. I'll dedicate my next meal to you. Sad to say, but I made this recipe for Halloween.

In reference to what I mentioned earlier, you read right, Seattle is smothered in snow.
