Pastry Creator, Mindy Segal, specializes in contemporary American cuisine, believing that quality and technique is fundamental to the development of a great dessert. After graduation from Kendall College, Segal took her first position at Chicago’s Ambria as pastry assistant to Judy Contino whom Segal considers her most important influence. Chef Segal’s solo venture, HotChocolate Restaurant and Dessert Bar, is the culmination of her 20 years of creativity and passion for the culinary experience. In 2007 and 2008, The James Beard Foundation honored Mindy by nominating her for Outstanding Pastry Chef in the country. The following history was provided by the Bucktown Community Organization: The History of Bucktown By far, the most frequent question asked is the origin of the name “Bucktown.” Though not documented, it is believed the term was coined early in the area’s history, probably the 1830’s, since many of the Polish settlers raised goats (the male is called a buck). The term faded away and emerged again in the 1920’s. Lending credence to this version, a long-time resident of the area recalls, “when my mother was little, there were only open fields where people raised goats. Where exactly is Bucktown?
