Chocolate Red Wine Cake - Emma's Little Kitchen. Chocolate and red wine come together to make magic in this vegan, whole wheat chocolate red wine cake. Perfect for your vegan valentine! Only a serious loser would bake her own birthday cake, right? Right. So I will just gloss over the fact that my hubby and I ate this Chocolate Red Wine cake for my Birthday dessert last month, and focus on its suitability as a vegan valentines day dessert instead. Chocolate and red wine contained within one bite? That is my idea of a good time. This is such a lovely variation on the traditional chocolate cake. I definitely fall into the Valentines Day non-enthusiastic camp, but I will take it as an excuse to make this chocolate cake again.

As I’ve said before, I don’t plan in advance the recipes I’m going to post here on the blog. I like to be inspired by the seasonal ingredients I buy every week and just create something with them. This week I’ve brought home lots of mushrooms and nettles, so the idea was to post a recipe here that highlighted one of these ingredients (I’m not quite sure if mushrooms and nettles go well together, hence why I didn’t attempt to put both in the same dish – probably a wise decision).

When I cook with mushrooms I like to keep things very simple. I usually just panfry them with lots of garlic and that’s it. However, I kept thinking about a delicious mushroom soup that I’ve made once, following this recipe, and because it’s still incredibly cold around here, I was craving something similar. My original plan was to use millet in the soup, but I’ve found in the pantry a bag of quinoa 2 days past expiration date (ups) and used it instead. Mushroom & Quinoa Soup serves 4 3 garlic cloves, minced. Feeding My Addiction: Chocolate Covered Strawberry Protein Squares. When I was trying to figure out what protein bar flavour I should try next I was at a loss.

I tried to think of Valentine's Day. I feel like I've covered most of my bases with these cookies. And these cookies. And these brownies. OH and these raw vegan chocolates. But one thing that came to mind that reminds me of this...holiday coming up...was chocolate covered strawberries! How quintessentially Valentine-y! How to make them into a bar though..Hmm...puree some fresh strawberries (which I had to bundle myself and trek into the dangerous tundra of Canada and get from the local supermarket where every Tom, Dick and Harry was conveniently also shopping - EXHALE).

Okay...soo...fresh berries...puree them...Add them to my protein bars...but let's switch it up and make these more light and refreshing. Some choco-swirl..because we have to cover out strawberries in chocolate, DUH. Beautiful. Only it WASN'T. It was grrrrreat. So as long as you are okay without them looking pink....skip the colouring. No Bake Chocolate Coconut Energy Bites (Vegan) Lentil Chili Pot Pie with Pumpkin Cornbread Topping | love me, feed me. The theme of February so far seems to be comfort food.

Which is fitting considering it’s been so grey and rainy lately and there’s no sign of it clearing up anytime soon, so I’m in need of all the comfort food I can get. And what’s more comforting than a hearty chili? How about lentil chili baked into cute little pot pies with a pumpkin cornbread topping? Yeah, I’d say that’s even more comforting. These pot pies are just begging to be eaten while you’re all cozied up in a big sweater, knit socks, and wrapped in a blanket. It’s a hearty veggie-filled lentil spicy chili topped with a slightly sweet and fluffy pumpkin cornbread that happens to be gluten free. Let’s take a minute to talk lentils. These pot pies have been on my mind for a realllllly long time and I’m so happy I finally made them.

If you give these a try, let me know! And friends, if you like the look of this dish it would mean a lot to me if you gave it some love here on the contest recipe board! Winter in New England has been pretty rough this year. We are literally buried under massive piles of snow and there are days when you can’t leave your house, or even open your front door.

For the most part, it is cold and miserable.
