Puff Pastry 4 Ways. Creamy Roasted Red Pepper and Cauliflower Soup with Goat Cheese. Soup season is definitely here and do I ever have a tasty one to share with you today, a creamy roasted cauliflower and red pepper soup! The original idea behind this soup was for a creamy roasted red pepper soup but I figured that I would keep things a little on the healthier side by using pureed cauliflower to add the creaminess and to help thicken the soup up a bit.

Roasted red peppers and cauliflower are a great combo and another thing that I like to combine with roasted red peppers is tangy goat cheese which also further adds to the creaminess of the soup. Like a lot of great soups, this one is super easy to make where you really just need to roast the red peppers and cauliflower, saute some onions, add the broth and goat cheese, and heat up before pureeing. I added one final touch to the soup and that was a bit of paprika to add a hint of smokiness! I know what a few of you are thinking right about now and that is: "But Kevin, where is the bacon? " Does this soup look good? Thai Coconut Curry Butternut Squash Soup. Right now, I’m sipping hot coffee, trying desperately not to burn my mouth. I have my coat on (inside the office), a sweater, and a t-shirt, and I’m still cold. I had to warm up my car for 10 minutes this morning.

Hello, freezing Fall weather. I’ve been anticipating your arrival. There are two ways that I love to warm myself up with food when the days cool down: lots of spice and hot foods. That’s what makes this Thai Coconut Curry Butternut Squash Soup absolutely perfect for this time of year. My mom and I are obsessed with this soup, and to be completely honest, neither of us are normally the hugest fans of squash. However, there’s just something about the combination of fragrant red curry paste, creamy coconut milk, sour limes, and slightly sweet squash that makes me swoon. This article originally appeared on Food52.com Thanksgiving for vegetarians really isn’t that big of a deal. Unless you’re sitting at a table where everything has been pre-drenched in gravy or stewed in chicken stock or fried in bacon fat (I assume that such tables exist, but I have never sat at one), there are probably enough meatless foodstuffs to make a meatless meal.

But it’s a holiday that centers around turkey, and thus there’s an odd spotlight that shines, each year, on meat abstainers. What will they eat? What will they bring? Watermelon Recipes To Eat All Summer Long. Healthy Pizza with a Cauliflower Crust. I was planning to share a quinoa, kale and tofu skillet recipe this morning, however plans changed after I had one bite of the pizza I made last night for dinner. Don’t get me wrong, the kale and tofu dish is great (I’ll still post the recipe sometime this week). However, this pizza isn’t your average pie and judging from the response I got when I posted an Instragram photo on Facebook last night, the recipe needed to be shared right away. The thing that makes this pizza so unique is that the crust is made out of cauliflower – yes, the vegetable! I honestly can’t remember when or where I first saw the idea for pizza made with a cauliflower crust (probably Pinterest), but I know that it has been done many times before.

I used this blog post from DAMY Health as a guide and came up with a variation of the recipe. I was a little skeptical about using cauliflower to make a pizza crust, but trust me when I say that it’s pretty amazing. So yes, pizza CAN BE healthy! Pre-heat oven to 400° F. Grilled Cheese for Adults (Recipe) Though I’d like to think I’m a full-fledged adult, I always come back to grilled cheese. Is there a more perfect food? Gooey cheese between two pieces crunchy, buttery bread? I think not! If you’ve ever tried to make your grilled cheese appeal to your more sophisticated tastes, though, you’ve invariably come into the problem that most fancier cheeses just don’t melt well. All is not lost, though; thanks to the expert chefs at Cook’s Illustrated magazine, we have ourselves the perfect adult-friendly grilled cheese. The method may seem a little strange at first — grilled cheese that involves a food processor?! — but, trust me, the results are fantastic. I opted out of spreading mustard on the sandwich and instead added extra flavor by sprinkling some roughly chopped thyme and sage on top of the cheese mixture.

The evening wasn’t super crowded, but the people that showed up were all Quality (with a capital Q). My cohost Melanie showed up with mouthwater Mucho Margarita Cupcakes, that were vegan no less! We sprung into Yelton Manor Bed and Breakfast “Test Kitchen Mode” this morning after we found this amazing treat on Pinterest from a blog called “Ambitious Kitchen, The Perfect Slice of Life”. Just the NAME of this was enough to send us into spasms of food lust!!!! I dashed out to the Farmer’s Market for the raspberries while Cindi pulsed the oats in the food processor to make the perfect (and gluten free!) Flour. We are always freezing bananas at their perfect, spotted ripeness moment, the freezer is chock full of them for smoothies and banana bread. In the original recipe the banana bread is made in a loaf pan, but we love these individual small loaves. No doubt, we were smitten with the sight of sweet/tart raspberries and dark chocolate being mixed into this lovely oatmeal and banana batter. So, into the baking pans with it!!!!

Dark Chocolate Raspberry Oatmeal Banana Bread About 3 cups oatmeal Other ingredients: 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt. Creamy Feta Dip with Jalapenos. I know what you’re thinking. Boring title. A bowl of white cheese. Somewhat plain. Kind of a snoozefest. How crazy can this really be? I was skeptical too. I didn’t make this recipe up. She first told me about it on one of our walks about a week before we headed to the beach. By Sunday, it was the only thing on my mind. I don’t even know where to start. This is quite possible one of the best things I have ever tasted. If that doesn’t sell you, I don’t know what will. Creamy Feta Dip with Jalapenos makes about 2 cups [a little goes a long way!]

In a large bowl, crumble the feta bricks. This is definitely my new party appetizer. Thy Hand Hath Provided: Ice Cream Sandwich Cake. This might be our family's most requested birthday cake from now on.

The recipe comes from a friend from church, Wendy. She is very popular at our house right now:-). I first tasted this cake at Wendy's house during a Youth Council meeting. I could not figure out how they made it and was in awe of the flavor that seemed to take me back to my childhood. The layering impressed the dickens out of me and while I knew I was going to ask for the recipe, I was afraid it would look too involved. I was wrong. Banana Split Version (sliced bananas, strawberry sundae topping and crushed Oreos) Yep, that's it.

Lay half of the ice cream sandwiches (whole) in the bottom of a 9 x 13-inch pan, trimming the last couple to get complete coverage. That's it. Depending on how cold your freezer is, you may need to thaw it on the counter for 10-15 minutes before serving. But, oh, I would have missed the taste of those store-bought ice cream sandwiches I remember growing up. Gumby's Pokey Stix Copycat Recipe. When I was in college, Gumby's Pizza was an integral part of a fun evening out. We would call (from our land lines of course) to order Pokey (or "Hokie" at my school) Stix, drown them in ranch dressing and have a great time recapping our evening. This was a tradition that sadly only continued as alumni whenever my friends and I returned to campus for a game. To my amusement when I first started going to Penn State with my now husband and his group of friends, I quickly discovered that they too had a Gumby's and ordered Pokey Stix many times themselves.

This love for "Pokeys" developed into calling the State College location whenever we traveled to a football game, picking up the delicacies as we pulled into town and carrying them out to our tailgates. I don't know anyone who loves them more than my friend Laura, so of course it was only a matter of time until we tried a copycat recipe. Enter Pinterest. Pokey StixInspiration from Gumby’s Pizza. Scalloped Potatoes: How To Make Them Fast. Crispy Baked Eggplant Fries with Marinara Dipping Sauce (aka Eggplant Parmesan Fries!) After the recent extraordinary success of the crispy baked portobello mushroom fries I was thinking about what other vegetables could be turned into fries and with the abundance of cheap eggplant these days, it seemed like the perfect candidate to try next! I was a bit worried about using eggplant to make fries as eggplant can have a lot of moisture, and no one want soggy fries, but given how addictively good roasted eggplant is, I just have to give it a shot!

Once again the recipe for the eggplant fries is extremely quick and easy! You really just need to slice the eggplant, coat it up in the breadcrumbs, parmesan and seasonings and bake it until crispy. (There is really no excuse for reaching for that bag of chips all the way at the back of the cupboard!) As it turns out, I had nothing to worry about as the eggplant fries came out perfectly crispy and golden brown and as you can see from the photos, I have made several batches already!
