This month we are featuring… Recipe: Zucchini Carob Cake with Sprouted Flour. Ingredients6 tablespoons butter1/2 cup mild olive oil1 3/4 cup maple sugar or Succanat2 eggs1/2 cup diluted yogurt (put two tablespoons water in 1/2 measuring cup and add yogurt to make 1/2 cup) or use kefir milk or buttermilk 1 teaspoon vanilla extract2 cups Essential Eating Sprouted Flour1 teaspoon baking soda1 teaspoon baking powder1/2 teaspoon ground cinnamon1/2 teaspoon salt4 tablespoons carob powder 2 1/2 cups grated zucchini1/4 cup carob chips Directions Preheat oven to 325 degrees.

Recipe: Zucchini Carob Cake with Sprouted Flour

In an electric mixer, cream butter, oil and sugar. Add eggs, yogurt and vanilla; blend well. In a separate bowl, whisk dry ingredients and add to butter mixture. Add grated zucchini, and mix well. Spread batter into a greased and floured 9×13 inch pan. Sprinkle chips on top and bake 35-40 minutes until center tests done with a toothpick and edges slightly pull away from sides.
