During the Cheap Sally Party at BlogHer11 Kmart had a cabana set up where they were showing guests the new line of Gordon Ramsay Cookware which debuted in Kmart stores this past Sunday. Along with showing guests the new cookware they also provided everyone with a flash drive containing recipes from Gordon Ramsay. Not only did I pick up Gordon Ramsay's Santoku Knife and Cutting Board over the weekend, but I also made his Orange and Ginger Caramelized Chicken Wings. Ingredients: Vegetable oil (for cooking)6-8 shallots, peeled and sliced4 garlic cloves, peeled and sliced2 lemongrass stalks, trimmed and bashed5cm knob of fresh ginger, peeled and juliennedZest and juice of 2 oranges150g / 5.3oz Granulated sugar160ml / 5.5oz water2 tbsp fish sauce1kg / 2.2lbs chicken wingsSea salt and crushed black pepper Preheat the oven to 180C (Fan 160C and Gas 350F). It's not ice cream, it's not cake, it's not fudge- so I'm calling it a terrine. Chocolate and peanut butter are melted and folded together with whipped cream then poured in a loaf pan. A batch of vanilla whipped cream is layered on top and the whole thing gets a generous dose of salted peanuts before freezing.

This dessert is incredibly rich, so I love to serve it with coffee. Not a coffee fan? The recipe is delicious as-is, but I have plans for a hazelnut version. It’s never revealed what exactly is in that cauldron, but I’m guessing it was apple butter. I came to this conclusion after my recent experience making my own batch of apple butter. Except that instead of a cauldron, I used a Dutch oven. But, there was a lot of bubbling, gurgling and spitting. And, even though I’m not a witch, I may have done a little chanting too. For the record, I’d never made apple butter before. One day a few weeks ago, when the cold, sad wind around a bleak gray sky was howling, I was consumed by the need to can something. As I searched, I was surprised to learn that apple butter is really quite easy to make. So, let’s make some apple butter! Towel.
