I have been wanting to post this beef barley stew for a couple of weeks now but I keep forgetting. That is until now. With the recent stint of cold weather this wholesome comforting dish will make you warm from the inside out. This recipe is compliments of my mom. Ingredients 1-1/2 pounds lean beef stew meat, cut into 1/2-inch cubes2 large potatoes, cubed1 medium onion, chopped1 tablespoon vegetable oil3 cans (14-1/2 ounces each) beef broth1 cup medium pearl barley1 Tsp. dried thyme1/4 Tsp. dried rosemary, crushed1/4 Tsp. pepper4 medium carrots, sliced1/4 Cup each frozen green beans and corn Method Zesty Tip: Try making your own broth and freezing it. Years ago, when I started swapping soup with my pals in Seattle as way to overcome my boredom with big pots of soup I’d never have guessed it would have turned into a day that, for me, rivals Thanksgiving or my birthday on the calendar. I was reminiscing with a friend who was at those very first soup swaps in my tiny Seattle garden cottage when I was 28 or 29 and still working out an easy swapping system.
