Egg Tarts. I grew up having these egg tarts either as an afternoon snack or as part of any party/gathering menu. Of course, you can make it into a pie but sometimes, small one serving tarts are just too cute, right? It would have looked even cuter with fluted tart molds but I didn’t have any on hand. I just used a normal muffin baking tray and ended up with these: You will need: 125 grams unsalted butter, room temperature 60 grams confectioner’s sugar 1 large egg, lightly whisked 230 grams all-purpose flour 1 tsp vanilla extract 130 ml fresh milk 100 ml hot water 90 ml evaporated milk 3 eggs, lightly beaten 125 grams caster sugar Directions: 1. 2. 3. 4. 5. 6. 7. 8. 9. We all know that pomegranates are: -full of antioxidants. -it prevents the formation of dangerous blood clots formation.

-keep “bad” cholesterol at bay. -neutralize the effect of free radicals to your body. -increases your heart’s oxygen levels. -reduces arthritis inflammation. -lower risk of heart disease, diabetes and cancer -fight cell damage -rich source of various vitamins like A,C,E and folic acid. These are just some of the pomegranate’s health benefits. Here is how we like to consume pomegranates in my household. You will need: Open the pomegranate and take out the arils. Like this: Like Loading... Meringue Cake (Tarta de Merengue) Today, I am sharing with you my Meringue Cake recipe! This is one of the easiest dessert I have ever made! First and foremost, make sure your egg is at room temperature and that the beater and the bowl where you’ll be beating the egg whites is free of any strain of grease.

Also make sure that your egg whites doesn’t have any trace of egg yolk in it. I use a 12.5″ x 8.5″ non-stick pan to bake my Meringue Cake. Even though it is a non-stick pan, I still coat it with some cornstarch. Make sure to take off extra cornstarch by tapping lightly on the pan, with the pan upside down. Also take note that the texture of the meringue cake will depend on each person’s preference. As you will only use the egg whites for the meringue cake, what I do is I use the egg yolks by making some baked custard. Now, for the meringue cake. 6 egg whites 300 grams icing sugar a pinch of salt 1. 2. 3. 4. With the help of a rubber spatula, transfer the meringue to you pan. It was delicious. P.S. We usually make this with caramelized sugar but for my family here in Spain, I do without the caramel due to my family’s request. They’re not a big fan of caramel. For this recipe, you will need: 6 egg yolks 400 ml condensed milk 200 ml full cream or semi-skimmed milk Pre-heat oven at 150ºC In a bowl, place the egg yolk, condensed milk and milk. Pour and strain into your baking dish.

Cook it in your oven in a bain-marie. Just to make sure the top doesn’t burn, I cover each baking dish with an aluminum foil. Chill. This recipe was first seen in my sewing blog, To Sew With Love. Frost your puff pastry roll with it or… Frost a cake with it! Yum! You can even place some on top of your favorite milk or fruit shake! For this recipe, you will need: 3 egg whites, room temperature 3/4 cup water 1 to 1 1/2 cup granulated white sugar Directions: In a grease-free bowl, place your egg whites. On a stove, heat a small pot. With a mixer, beat the egg whites on low speed (1) until fluffy. The syrup should be boiling by now. Turn off the stove. On medium speed (3), beat the egg whites while you pour slowly, thinly (thin as a string) and non-stop the syrup into the egg whites. Once you’ve poured all of your needed syrup, beat for 1 minute more. Place it in the refrigerator in a covered bowl until you need it!

Puff Pastry Filled with Apples, Pears and Raisins. Boñuelos de Patata o de Boniato/Fried Potato or Sweet Potato Doughnuts. This is a typical spanish snack favorite. You can make this using potato or even sweet potato!

One tip though: I always found my boñuelos softer and sponge-like in texture (inside) and crisper (outside) when I prepare the batter hours ahead before finally using it. It is also great to use those left-over boiled potatoes! 2 medium-sized eggs 250 grams all-purpose flour 100 grams boiled and mashed sweet potato or potato 12.5 grams yeast 25 grams milk 50 grams white sugar 50 grams olive oil Directions: In a bowl, mix the flour and yeast. In a different bowl, beat the eggs. Take the bowl out of the fridge at least 30 minutes before using it. Heat oil in a pan at medium low heat. Roll the boñuelos into a plate of white sugar. Enjoy! Like this: Like Loading... Yema {Custard} Balls. Yema balls are typically made with egg yolks and condensed milk. Sometimes, processed or chopped roasted peanuts are also added and gives an interesting mixture of flavor and texture. Yema balls are part of my childhood. I remember, when I was still a kid, I would buy two balls for PHP 0.25 which means that with 1€ today, I could have bought more than 400 yema balls!

When I had kids, I started making these custard balls at home. n my home, a merengue cake is synonymous to yema balls. It’s a great way to use the egg yolks (aside from making Creamy Leche Flan, of course!) You will need: 6 Egg yolks 500 grams Condensed Milk 25 grams butter white sugar Directions: 1. 2. 3. 4. 5. 6. 7. 8. 9. 10. To serve your yema balls, you can also use lollipop sticks or cellophane candy wrapper instead of using cupcake liners! Like this: Like Loading... Chocolate Ganache. Chocolate ganache is creamy, rich and sinful! But it could only be as rich, creamy and velvety if you use a good quality chocolate with the same characteristic. The best thing to go for is a chocolate you would eat out of hand. I don’t like my chocolate too sweet.

I like it bittersweet. You will need: 25 grams unsalted butter 230 grams bittersweet chocolate, coarsely chopped 150 grams heavy whipping cream 1/2 teaspoon vanilla extract (optional) 1 tsp brandy de jerez, cognac or rum (optional) Directions: 1. 2. 3. 4. 5. 6. Like this: Like Loading... Cheese Custard (Flan de Quesitos) My family loves cheese. They love custard, too. So, why not combine both? For this recipe, I used two (2) 8.5″ x 4.5″ loaf pan to bake the custard using the bain-marie (water bath) method. I don’t see why you can’t use a steamer for this recipe. When I was young, we used to make Leche Flan using the steamer.

Macedonia de Frutas con Miel {Honey Fruit Medley} I love eating fruits on its own but sometimes, it’s also tempting to have a mix of different fruits in just one bowl (or glass!) This is one of the many uses I have found for the whisky glasses lying idle in my cupboards. For two servings, you will need: 1 small can of canned peaches (3 halved pieces) 2 slices of canned pineapples 1 medium-size orange 1 small ripe banana 1 small apple moscatel raisins honey brandy de jerez Directions: 1. 2. 3. 4. 5. Here’s another whisky glass dessert I want to share with you. It was a hit with the family! You will need: sponge cake slices (I used homemade from scratch but you can use other alternatives such as ladyfingers, etc) strawberry (or other flavor you like more) jello slices of canned peaches slices of fresh strawberries Philadelphia cream cheese caster sugar (depends on how sweet you want the cream cheese to be) fresh (or skimmed) milk brandy or cognac Directions: 1. 2. This recipe was handed to me by my mother-in-law who learned it from her own mother.

It is sweet and refreshing especially when drank cold. But it doesn’t always have to be drank. You can also serve it with your fruit desserts! I made this delicious strawberry trifle not so long ago. I use my whisky glasses to serve them. Serving the kids with raw eggs just freaks me out. So, I came up with this not-too-sweet yet creamy Tiramisu recipe which I usually make whenever I make some Strawberry Trifle.
