The search for a lost recipe begins | Outside Oslo. I’m on a mission to recreate an old Grandma D. classic. When she died nearly two years ago, most of her recipes died with her, including a Scandinavian butter cookie that I grew up eating each year during Christmastime. A cookie shaped into parallelogram, with horizontal ridges made from the tips of fork tines, these cookies were a sign of the holiday season in our family.

Finding a similar recipe requires detective work. The clues are few, the evidence intangible. What were the cookies originally called? Where does that leave me? The resources are endless. Here’s my first attempt, a simple recipe called “Norwegian Butter Cookies” from Gourmet. The verdict? Do you have any ideas? Norwegian Butter Cookies Adapted from Gourmet (March 1983, reprinted in December 2001), based on a recipe from Carrie Young Preheat oven to 350 degrees. Sift together flour, baking powder, and salt, then add to the butter mixture, mixing at low speed just until incorporated.

It was 3 days completely packed with information, fun, and, as you might have guessed… food. The city of Portland was welcoming and friendly. Apparently, I visited on a perfect weekend. The weather was stuff we only dream of in Dallas. Foods, and particularly healthy foods, played an important part of the event and evidently in the Portland culture overall. There are growers and manufacturers all over the region dedicated to healthy food practices.

One such manufacturer is Bob’s Red Mill. Several weeks before attending I received an email inviting me for a tour of the facility along with several other conference attendees. CHRYSANTHEMUM CUP CAKES. Oh my goodness, how excited was I to discover how to make these. I think the effect is so stunning yet it's really easy to do. You'll want to try it to see for yourself I'm sure. I've made cup cakes using a basic victoria sponge. Actually they were chocolate & banana swirled together. Next top with butter cream ready for the petals. To make each petal you'll need coloured sugar and mini marshmallows, you know the kind they pile on top of your hot chocolate in cafes. Now for the clever bit. How easy is that, I told you! Strawberry Popsicles. Homemade popsicle is one of the healthy treat for kids, because it is made from fresh and natural ingredients without the added artificial colouring and flavoring like those selling in the stores. I was inspired by my good friend cherry yogurt popsicles and it gave me a great idea to make some for my son as he often drooling over those popsicles in the store. Making the popsicle at home gives me the freedom to choose the flavour from fresh ingredients like kiwi, strawberry, blueberry, orange & etc.

This recipe is so versatile, you can make some tweaks to the recipe by choosing your favourite seasonal fruits, your favourite yogurt and honey too. I saw some big and red strawberries from US in the grocery store and it makes a good choice for the popsicle. Moreover, strawberry is one of my son’s favourite. My son just couldn’t wait for the popsicles to set in the freezer and pop them into his mouth.
