Herbs That Heal. Homemade Nutella Recipe. Last year, I made the confession of all confessions. I was on the fence about Nutella, and while I was enamored with some Nutella cookies that I made, I still wasn’t completely sold. I haven’t been able to put my finger on it, but it just wasn’t living up to the high expectations that the foodie world had set for it. When I first started flipping through my new favorite DIY cookbook last year and marking recipes to try, the homemade chocolate-hazelnut spread didn’t set the world on fire for me.

It wasn’t until a few weeks ago when I revisited the book that I took a second glance at the recipe. The rest, as they say, is history. In the recipe headnote, it mentioned that commercial chocolate-hazelnut spreads often lack real nut flavor and can taste plasticky. Yes, that! In addition to being one of the easiest recipes you’re likely to find, it has officially changed my mind when it comes to the chocolate-hazelnut spread phenomenon. Eat it, I did! Arthritis ease. I came up with the recipe over the weekend because I had a ton of fresh cranberries leftover from Thanksgiving. It’s a classic quick bread, which means very easy to throw together. Begin by combining the buttermilk, orange zest, orange juice, melted butter and egg in a small bowl. Next, whisk the dry ingredients together in a large bowl. Add the wet ingredients to the dry. Stir gently with a rubber spatula until just combined. Add the chopped cranberries and nuts. Scrape the batter into a loaf pan. Bake for about one hour, then cool in the pan for ten minutes. Turn the loaf out onto a rack to cool completely.

If you’re a fan of Pecan Pie, you’re going to love these Pecan Squares. A buttery shortbread crust and rich caramel-pecan topping make them truly over-the-top…the perfect hostess gift, treat for your co-workers or potluck dessert this time of year. Let’s make them. Begin with the shortbread crust (which, by the way, is much easier than making a homemade pie crust). Combine the flour, cornstarch, confectioners sugar and salt in the bowl of a food processor.

Pulse a few times until combined. Toss in the pieces of butter. Pulse until the mixture resembles course meal with pea-size clumps of butter within. Dump the mixture into a foil-lined pan, then press firmly with your fingers to form an even crust. It should be packed down, like this. Bake until set but not browned, about 20 minutes. In the meantime, make the topping. Boil gently for a few minutes. Then stir in the heavy cream and chopped pecans. Spread the pecan mixture onto the baked crust. Chai is the actual word for tea in many countries but when we say chai in the States, we’re usually referring to Masala chai, which is a smooth and calming beverage made of black tea, milk and fragrant Indian spices.

Its flavor goes beautifully with banana bread, so I’ve taken one of my favorite banana bread recipes and subtly infused it with warm chai spices like cardamom, cinnamon, ginger and allspice. It’s wonderfully moist and aromatic — a sophisticated twist on basic banana bread. As with all banana bread recipes, use very ripe bananas for the most intense banana flavor and a texture that mashes easily. Begin by creaming the butter and sugar until light and fluffy. Add the eggs one at a time, incorporating well after each addition. Whisk together the flour, baking soda, salt and spices. Add the dry mixture to the butter mixture and mix to blend. Beat in the mashed bananas, sour cream and vanilla until just combined. Let the loaf cool in the pan for about 10 minutes.
