It's Football season around here and I don't know about you but at my house the television is always on the game and my husband is looking around the kitchen for some snack type foods. If I don't have them ready, he goes out and buys junk food. I would rather have something with a little nutritional value and these baked potato skins still have the vitamins just under the skin and bonus points--they are not deep fried. I guess it really doesn't matter since they get eaten and my husband doesn't complain. Hope you enjoy this little treat at your house. Baked Potato Skins Ingredients 4 large baking potatoes, baked 3 tablespoons vegetable oil 1 tablespoon grated Parmesan cheese 1/2 teaspoon salt 1/4 teaspoon garlic powder 1/4 teaspoon paprika 1/8 teaspoon pepper 8 bacon strips, cooked and crumbled 1 1/2 cups shredded Cheddar cheese 1/2 cup sour cream 4 green onions, sliced Directions 1.Cut potatoes in half lengthwise; scoop out pulp, leaving a 1/4-in. shell (save pulp for another use).
