Pa amb Tomaquet (Bread with garlic & tomato) Chilled Rice and Artichoke Salad Recipe. Years ago my sister-in-law (who is also one of my favorite people in the whole world) brought this amazing Chilled Rice and Artichoke Salad to our family picnic. It was unusual, sophisticated in it’s flavor and delicious. I am so glad I found my way over to her to beg ask for the recipe.

When I asked, she gave me a sheepish, funny face. “What? I said, “You’re not going to share?” Iced Brazilian Mocha-Cola (Iced coffee) Serves 4 Brazilian iced coffee has the spirit of a root-beer float. Rich chocolate milk and fizzy cola sweetens the drink, while the coffee gives it a nice kick (although decaf is a great option, too)! Kids will love the novelty of plain old chocolate milk with cola, without the coffee. Feel free to top with vanilla ice cream, instead of whipped cream. Mmm…. Ingredients: 1 cup double strength coffee 12 oz can cola 3 cups chocolate milk Whipped cream or vanilla ice cream. Iced Hibiscus Drink with Fresh Pineapple (Bissap a la Bonne Dame) Makes 1.75 liters (plus the pineapple) Chilled hibiscus tea is light and refreshing. The natural floral tang is a wonderful counterpart to sweet pineapple chunks. Kids will love fishing out the fruit in this totally and wonderfully decaffeinated iced tea. VARIATION: Some recipes call for equal parts lemonade to hibiscus tea.

Carnaval in Managua, Nicaragua. The recipe is a cooked horchata (homemade rice drink), different from the amazing no-cook Strawberry Almond Horchata we made for our Mexican Global Table. Puree with a sprinkling of sugar and you’re done. Dutch Potato Salad. If I were to make a potato salad, it would not be loaded up with mayo, nor would it be heavy as a brick 0r as fresh as Frankenstein. No. My picnic table would have something far more glorious: I would make this Dutch potato salad. She’s full of bright, juicy apples, smoky cubes of ham steak, sweet corn, and tiny, salty gherkin slices.

She’s an entire meal, surrounded by tender lettuce, hard-boiled eggs, cucumbers, tomatoes, more gherkins, and whatever else you’d like to nibble on. Radishes? It was always a go-to dip for when guests came over. One day I was making it and I had some leftover roasted fennel from the night before and I pureed it into the dip; it was amazing! The next time I broiled some Parmesan cheese on top to create a crunchy texture and it was perfect. You could serve this with crostini, pita chips, or tortilla chips.
