Bean Chili with Walnuts & Chocolate

Elsa is sleeping. Finally time to write that post we prepared earlier this week. I’ve been looking forward to share this recipe, as I am pretty certain that many of you will like it. This bean chili (or chili sin carne, as David calls it) is not only warm, comforting and spicy. It also has the most wonderful flavor from dark chocolate, coffee, red wine and crunchy walnuts. I am dedicating this recipe to my brand new bike. And while I am on that subject. Ingredients (12 patties) 3 cups mixed boiled beans (I used chickpeas, red beans and mung beans)1 aubergine (or eggplant if you are more familiar with the term)1 onion, finely chopped2 garlic cloves, finely choppedHandful shredded and chopped cabbageDried thyme1 teaspoon potato starchA few mint leaves, finely chopped (optional)Salt to taste Oil for shallow frying and coating Slice the aubergine into thick circles (or whatever is easiest for you to fry). Green Beans Wrapped In Courgette Ribbons with Pesto

I've used some courgettes sliced thinly into ribbons using a vegetable peeler. Drizzle with a tiny bit of oil and toss them lightly in a pan on medium heat for no more than 10 seconds; just enough to soften them, so they are slightly more 'rollable'. Take some green beans, trim the ends and steam until tender but still crunchy. Usually only takes a minute or two. The nice thing about having Lizzie over for dinner is that she’ll take much better pictures of the food than I ever will. Hence, the picture above is much nicer than the one I would have taken. You should see the size of Lizzie’s lens. (As you can tell, I took that picture, which is why Craig’s totally out of focus; though the fact that Lizzie’s in focus may mean this is a highly accomplished artistic shot on my part.) I decided to make Lizzie and Kyle a black bean chili from Chris Schlesinger & John Willoughby’s cookbook, “Let The Flames Begin,” which I bought at a used cookbook store in Atwater Village.
