Banana Soft Serve (It’s Homemade One Ingredient Ice Cream, SERIOUSLY!)

A few weeks ago Kim sent me this link from theKitchn, How To Make Creamy Ice Cream with Just One Ingredient! Being an ice cream fan I was immediately intrigued. So I did a little digging with google and discovered I was missing out on some crazy banana ice cream trend! Who would have thunk it? A frozen banana run through the food processor would make the most amazing creamy dessert! This doesn’t really warrant a recipe but I’ll right up my base and you can make it your own. 2 ripe or overripe bananas2 tsp vanilla (optional)Chocolate Syrup (optional – in picture) Break or cut up the banana in about 1 inch chunks and freeze solid.

Puree frozen banana chunks in the food processor for about 5 minutes. About half way through add the vanilla. Enjoy immediately or refreeze. Once you refreeze the banana soft serve, you will have to let it sit for about 5 minutes before stirring. Topping/addition ideas… Banana "Ice Cream" (made from bananas ONLY!) They're pretty inexpensive compared to some other fruits and all three of my kids like eating them. Like most kids, my three also really like ice cream. So when I saw a cooking segment on the Today show last spring showing how you can make "ice cream" from frozen bananas, I was all over it. We made it several times last year and just made our first batch of the summer this weekend. It's really yummy and hard to believe you can get the creamy texture of ice cream from only bananas. You can also mix in other ingredients when it's in the soft-serve state ~ we like to add in peanut butter, chocolate chips or chopped nuts - YUMMY!! Bananas Foster. Place a medium to large skillet on medium heat, melt butter until foaming.

Sprinkle in dark brown sugar (should be one packed cup), stir until all the sugar is wet and begins to bubble. Meanwhile, peel the bananas; cut in half lengthwise and again in half crosswise, so each banana is quartered. When the brown sugar mixture is bubbling slowly, pour in the rum (see note below), and stir until smooth. Toss cut bananas in, and sautee for a few minutes, until they begin to get tender.

Dish up the ice cream into four bowls, spoon over bananas and some sauce. This sauce is dangerous, you will hear its siren call from the fridge if you have some leftover and once you make it, you will consider doing it again when a block of butter is staring at you and the bananas on the counter are beginning to get freckles. But there’s always room for one more ... and this s’mores tangent has a fruity twist. When you fire up the grill for its summer workout, you have to make these Grilled Banana Chocolate Melts. Wrap it in foil and throw it on a grill for a couple of minutes to get a warm, decadent banana melt. You’re gonna need a spoon for this one … that’s the only way to make sure you get every last morsel of chocolate and melted marshmallow. And it wouldn’t be a s’more if you didn’t get messy. No grill?
