The first time I ever heard about a “Meatball Sub” was when I was about 14/15. I was watching one of my all-time favourite tv programs, FRIENDS and Joey bought a Meatball sub to eat in the back of a car. He was so infatuated with this meatball sub and didn’t even want Chandler to smell it as he was “stealing taste particles”. Any sandwich that makes a man complain about people stealing taste particles is a sandwich I want…now! So over the weekend I had no idea what to serve for lunch and as I was strolling through the supermarket, saw the most delectable, fresh mini baguettes. Crusty on the outside and soft and doughy in the centre, (yes I broke one open, the bakery staff know me very well by know) I knew I wanted to create something around the bread.

If french fries and onion rings ever got married and had a baby, I think it would be something like this…a potato ring. My boyfriend and his friends have this thing where every super bowl they have a “Deep-Fry Fest” where, well they deep fry everything; so if you’re anything like my boyfriend you now have another “Deep Fry Fest” recipe to use! Two things I can’t stress enough is: 1) the importance of having the potatoes completely coated; no holes please, or the mashed potatoes will pour out of the holes once they hit the oil. 2) the importance of the rings being frozen solid before entering the oil…it just helps with the frying, that’s all. Finally, since ranch is pretty much good with anything it only seemed natural to pair these savory, fried treats with a quick and easy homemade ranch sauce.

October 2, 2010 My mom is obsessed with keeping a stocked freezer, but I guess I don’t really take after her, because my freezer tends to be relatively empty, aside from random containers of stock/ramen broth, frozen dumplings and pierogi. I admit, I store buy frozen chinese dumplings and pierogi for those times that I just don’t feel like cooking. I tell myself it’s because of ease and convenience, but really, I just love the taste of frozen pockets filled with deliciousness.

I came across this cauliflower crust pizza on Pinterest, and was instantly intrigued. A low-carb pizza? Sign me up! I was skeptical, of course, but curious enough to try it and see how it tasted. I was pleasantly surprised by the results. Now obviously, it is not quite the same as a traditional piece of pizza with soft, chewy crust, but it’s a great substitute when you’re watching your carb intake.
I find there’s a fine line between like and obsessed . A whisper-thin, sliver of a line. Take my reverence for Target, for example. What began nearly ten years ago as a casual, “Hey I really think that place is the cat’s pajamas” slipped almost too quickly into me considering ways to spend an entire weekend within its red doors.
