No Bake Peanut Butter Marshmallow Squares. Well lookie here. If someone would have told me ten years ago that I would spend the majority of my time in a kitchen stirring peanut butter and butter together over a hot stove, I think I would have punched them in the face. Mostly just out of disbelief. Partly because I want to punch someone in the face just to see what happens. Not because I want to harm someone’s pretty face, but because… I want to like… see what it feels like. I think it’d really hurt my hand. But this is totally how I found myself earlier this week.. standing over a hot stove stirring waaaaay too much peanut butter in a very large pot. I don’t know what that means but it’s what I wanted to do. It was nearly impossible to resist. So this normally isn’t my type of recipe – if I’m going to melt anything in a large pot with marshmallows it’s only going to be brown butter and crisped rice cereal – but the minute it popped into my inbox from a reader (thanks Jenn!)

This is simply a rework of those peanut butter marshmallow squares that I shared a few weeks ago, just trashed up with some chocolate and graham crackers since I’m a s’mores fanatic. No Bake Thin + Chewy Chocolate Drenched Coconut Oatmeal Squares

This. This goes on. Like I can’t even control myself long enough to take a picture of something before digging in with a fork. Ugh. And it happens ALL THE TIME. And yes, I say forkS with and S because I usually have some forks in every photo since I can’t think of anything new to throw in there and am a.) hungry 2.) lazy and c.) starving. These little squares are serious no-bake delights. Here’s what pretty little coconut oatmeal square tops look like.

Thin + Chewy Chocolate Drenched Coconut Oatmeal Squares makes one 9×9 pan (about 16 squares) 1 1/2 cups old fashioned oats 1 1/2 cups shredded, sweetened coconut 1/4 cup brown sugar, loosely packed. No harm was really done – just a few wrinkles. I wanted to make some sort of granola bar, but with fresh blueberries.

I thought so too. So into the bowl went whole wheat flour and oats and cinnamon and brown sugar. As you can see, the blueberries popped just like I hoped they would. While they are delicious warm, they don’t want to stay together at that temperature. But if you can’t wait for them to cool, I would highly suggest crumbling the mix right into some yogurt.

Blueberry Crumble Bars makes about 12 bars 1 1/2 cup rolled oats 3/4 cup whole wheat pastry flour 3/4 cup brown sugar. Better-Than-Crack-Brownies. I’m sorry for doing this to you.
