Egg and milk whisked together in amounts adequate to saturate whatever bread I had on hand. That’s all french toast ever was to me. It scratched an itch, but it was never anything to write home about. Then one day, when I had company for brunch, I thought – what the heck, let’s see what the Joy of Cooking has to say on the matter. So I followed their recipe. Eggs and cream beaten together, with maple syrup, vanilla and salt – what a revelation! Try it this weekend. Buttermilk French Toast

Instead of grabbing the usual Special K bar as I run out the door on weekdays, I can make pancakes, muffins, omelets (or “fancy scrambled eggs,” if the eggs don’t make the flip!) , quiches…the list goes on. This past weekend I was craving French toast. I make mine with buttermilk – like buttermilk biscuits, it just seems right. Hope you all have a great Super Bowl weekend…even if you’re not into football, I hope you enjoy all the delicious food!

3 eggs3/4 cup buttermilk1/2 Tbsp sugar1/4 tsp salt1/4 tsp vanilla extract1/8 tsp cinnamon1/8 tsp cardamom8 slices bread In a small bowl, beat the eggs with a fork. I’ll blush, I’ll smile a lot, I might propose–it’ll be weird and cute. Promise. Just when I thought pancakes couldn’t get any better, I stumbled upon this recipe by Tasty Kitchen member frecklesandsunshine. The title: When French Toast Met Pancakes…and Fell In Love totally made me giddy with butterflies in my stomach. I was in love way before the batch was whipped up. What makes this recipe so unusual (and delicious) is how the French toast is coated in a very thin pancake batter, creating an amazing crust around the bread. Let’s dive in, shall we?
