If I could have a breakfast rallying cry, a breakfast mantra, if you will, it would be, It’s not cake! It’s breakfast! It would be rather dull, naturally. I know that the line between Cake For Breakfast and our various formats of Breakfast Cakes ( muffins , coffee cakes and pancakes ) is thin, I know the distinctions on either side of it are, at best, tiny, but they are what allows me to pretend I’m eating cake for breakfast when I’m really not, so I cling to them.
Fat Cyclist and I became “innernet” friends around two years ago, and I remain a big fan of his rabid passion for cycling, his analytical, in-depth writing, his tireless work for the Lance Armstrong Foundation, and most of all, his unending love and commitment to his wife Susan, who’s been fighting metastatic breast cancer for some time now. I marvel at anyone who can write so much about a subject like cycling and attract scads of readers, many of whom (myself included) couldn’t care less about cycling. Now that’s a gift. Anyway, a few weeks ago Fatty wrote an update about Susan and mentioned that one of the only things she’s able to eat these days are his grandmother’s delicious, cheesy scrambled eggs. Trying to manage a balanced diet is difficult for me. One of the hardest things is to make sure I’m getting enough healthy protein. During a busy day, carbs are usually the quick go-to meal for me, but I’ve found when I focus on getting more good protein during the day I function much better, physically and mentally. I feel more even keel, if you know what I mean. Enter the frittata.
