But sometimes when I want to cut down on my carbs, I opt for cauliflower rice. I posted this Cilantro Lime Cauliflower "Rice" a while back, and it was a huge hit. So I decided to play around with that recipe and make this Asian version to go with the Orange Chicken I posted yesterday, and my husband (who detests cauliflower) was pretty amazed how the meal turned out. Slow Cooker Beef and Broccoli. A Chinese take-out favorite that can be made right in the slow cooker – no sauteing, no stirring, no frying.

Slow Cooker Beef and Broccoli

It doesn’t get easier than that! I’m all about making my favorite Chinese take-out dishes right at home. It’s so much cheaper and you can use better quality ingredients. But when you can also make it right in the slow cooker, well, that’s just an all-around win in my book. The best part about this is that there is absolutely no sautéing, no stirring, no frying or oil splatter of any kind. Now I should mention that I like my meat melt-in-your-mouth tender like a New York steak, which is why I only let mine sit in the slow cooker for a total of 2 hours. But if you like your meat in the texture of pulled-pork-tender, I recommend increasing the time to 3-4 hours.

Our new house is located right behind a Chinese restaurant, which can be quite annoying at times. I can always get a whiff of what they’re cooking, and it always happens when I’m hungry! So instead of moping around, craving Chinese food every single day of the week, I decided to make one of my favorite Chinese dishes at home – mongolian beef. But this isn’t any kind of mongolian beef dish. Black Bean Quinoa Salad. A light and healthy quinoa salad tossed in a refreshing orange vinaigrette, chockfull of protein and fiber!

Greetings from Cabo! After a very emotional departure with Butters, a 4AM wake up call, and spending 10 hours at the airport, we finally made it! So please forgive me if this post is a bit erratic and short. The gorgeous beach view and the last 3 glasses of margaritas are a bit distracting. Now I should tell you that I clearly did not plan for this trip at all. So like the caprese avocado salad I posted the other day, this was one of the last and final attempts for clean eating before our trip. And honestly, if all quinoa salads were like this, dieting would never be an issue.

One Pan Mexican Quinoa. Wonderfully light, healthy and nutritious.

And it’s so easy to make – even the quinoa is cooked right in the pan! Despite my daily 3-mile runs, all the morning donuts have finally caught up with me. So Jason and I made a pact to lighten up our diet before our Cabo trip in 6 weeks. Baked Ravioli. Amazingly cheesy, creamy, comforting ravioli made in 30 minutes or less, perfect for those busy weeknights!

With all the salads I’ve been posting lately, comfort food had to be next in line. After all, it’s all about balance, no? That’s where this creamy, comforting, cheesy ravioli comes in. And for those of you thinking you can’t break your diet for this, well, let’s just say that your diet can always start again next week. The best part about this recipe is that you can completely customize it with your favorite kind of ravioli – from lobster ravioli to artichoke ravioli. Quinoa Black Bean Tacos. Quick, easy, healthy and full of flavor – even meat eaters will love this!

I made these quinoa tacos in an attempt to stuff as many tacos in my face without feeling guilty about it. After all, bikini season will be here before you know it. And being an LA native, you should know that I have built quite an endurance for taco-eating. Now I’m used to those carne asada street tacos so making the switch to these healthy, vegetarian tacos left me a bit skeptical. But boy was I wrong. These tacos are loaded with so much flavor and such fun goodies, from the abundance of beans and sweet corn kernels. Tortellini Salad Recipe. On August 1, 2012 This tortellini salad post is long overdue.

It’s my Aunt Anna’s recipe. I posted a picture of it on Thanksgiving and was flooded with requests. I could make loads of excuses, but… nah.
