Eggnog Cheesecake Bars. Anything eggnog-related always reminds me of the movie “National Lampoon’s Christmas Vacation” – the scene where cousin Eddie is slurping it from the little reindeer glasses. I always wanted those reindeer glasses – so festive! We never drank much eggnog in our house growing up, but I managed to try it here and there over the years. I love the kick that it has, but more than drinking it, I love baking with it. Enter these cheesecake bars. A graham cracker crust topped with cheesecake filling that has eggnog, brandy and nutmeg in it (among other things) – talk about a real kick! This cheesecake filling is creamy, smooth and, as you can imagine, packed with flavor.

Be Right Back! Hi, guys. It’s PW. My friend Ryan, whom I affectionately call “Pastor Ryan,” has graced us (no pun intended; I crack myself up) with this sticky, delectable, and surprisingly simple recipe for…Monkey Bread. Take it, Ryan! That’s right…Monkey Bread. Although I’m almost certain there are no actual monkeys in this recipe, it’s still very good. I snagged the recipe from my mother-in-law Tracy, after I regained consciousness the first time I ate this strange, pull-apart, breakfast, lunch, or dinner bread thing.

I’d simply call it amazing, but since it also involves monkeys, I’d have to say it’s superhuman. And you know the best part about this here Monkey Bread? *holds hands up in paper-football goal posts to find the “L”* From left to right we have: * Brown Sugar // 1/2cup will be needed * 2 sticks of butter (1 cup) * Bundt Cake Pan (feel free to use dorky shapes) * Cinnamon // 2-3 teaspoons * 3 cans of Buttermilk Biscuits (the non-flaky ones) * Sugar!

If you follow Willow Bird Baking on Facebook or Twitter (you do, right?) , you’ve probably heard me whining about it lately (okay, maybe this isn’t the best way to encourage you to follow). It started with a sore throat and has turned into a beastly, phlegmatic ogre of a cold that has taken up residence in my chest and commenced hanging draperies and such. I have protested this development with various hot teas, soups, and my favorite home remedy suggested by readers: complaining. Three Safe-to-Eat Cookie Doughs: Chocolate Chip, Sugar, and Cake Batter! I know my students are to blame for this plague! I can’t stay home until I’m better, but I do tend to baby myself when I’m sick.

And I’m not even going to mention the amount of this cookie dough I consumed over the weekend. If nothing else, cookie dough is good for the soul. And now, look how far I’ve come: this weekend I made not one, but three kinds of cookie dough! So, in summary: I’m sick. Safe-to-Eat Sugar Cookie Dough. Chocolate Chip Oreo Cookies I procrastinate from my homework the best when I’m baking. Seriously. Instead of writing a 1000 word paper, I browse through my bookmarks on my computer and decide what I want to bake. After figuring out my next culinary mission, I get right to it and start mixing my little heart away. Once everything is set and cooled, I figure, “Well… I already have all my materials out, why not bake something else?” This is where the process starts all over again; It’s like a never-ending circle of baking that will, in turn, doom my academic career.

As I mentioned on Friday, I have been doing some experimentation with the beer and chocolate combination. The Guinness-chocolate ice cream that I made totally kicked butt, so I couldn’t wait to see how I liked beer and chocolate in my cake. The answer? I like it, a whole heck of a lot. This was my first time doing Guinness-chocolate cakes, and I was totally optimistic that I would love it, and I was definitely right. These cupcakes are fashioned after the popular drink that consists of a shot of Baileys Irish Cream and Irish whiskey dropped into a pint of Guinness.

I have never had one myself, but I’ve heard that if you can get it down before it curdles, it’s smooth, delicious and almost tastes like a milkshake. I’ll believe it because these cupcakes are all sorts of delicious. These cupcakes consist of a Guinness-chocolate cake base, which has a wonderful depth of flavor and is also supremely moist.
