Demystifying USDA Beef Grades. In culinary school, I wanted to better understand the lifecycle of the food I cooked, so I spent a summer "meeting my meat" on an animal farm.
Along with learning how to sex a goose and muck out stalls, I learned how to butcher an animal and how to properly cook each part. Today, I couldn’t be farther from the farm as I stand in front of the butcher’s case at the supermarket. I see all of these choices and tiers and grades, and I yearn for the simplicity of the farm. Or at the very least, some transparency. While the USDA meat grading system won’t tell me if the cow lived a good life or not, understanding how this system works helps demystify the labels.
