One the the things that I like about weekends is that I have more time to spend on breakfast. Instead of quickly making something so that I can dash out the door on my way to work I have the time to actually make something nice and over the long weekend I took advantage of that. With the recent success of the fresh corn pancakes I had pancakes on my mind though this time I was thinking about blueberry pancakes. Mini blueberry cheesecakes were also dancing through my head and at some point the two ideas collided and I soon found myself obsessing about blueberry cheesecake pancakes! I was thinking that I would keep things simple and start out with a basic pancake recipe that I would add big chunks of cream cheese to and top them with a blueberry sauce and crumbled cheesecake crust.

There is nothing better than garden fresh green beans. Even when my parents abandoned their garden beds for ten years, they still had their green bean “tee-pees” every summer. My father is rather picky about his beans. They must snap and break when you bend them, not wiggle around like a rubber band. That’s how you know they’re fresh.
You can wipe that smirk off your face. And pick your jaw up off the floor. No butter. No bacon.
I’m fairly convinced that the world would be a better place if more sprinkles were involved. I know. I just made pancakes . It seems I have an unnatural obsession with cake batter. Well I do. But hear me out.
Mmmm yep! A favorite quick breakfast is a slice of one of my 5 minute Protein Cakes toasted. Today I had a slice topped with a smear of butter but it's also great with a smear of nut butter , SF jam or just plain. Great breakfast on the go... toast, wrap in foil and you're off... A bout of insomnia was the perfect opportunity to try a couple of new flavors of my 5 minute cake. I've replicated most of the " traditional " cake flavors so it was time to get a little funky. These turned out great and besides being pretty they taste yummy which is the most important part. If you have whippersnappers you have to make these with them. I love making 5 minute cakes with kids because they just think it's magic and that I'm super cool and being cool in the eyes of a child is the BEST kind of cool. Shelly's 5 Minute Sugar Free Banana Caramel Nut Cake 1 Egg, beaten 3 Tablespoons Milk (I used Vanilla Soy) 2 Tablespoons Sugar Free Torani Syrup (I used SF Caramel ) 2 Tablespoons Banana, mashed 2 Tablespoons Canola Oil 3 Tablespoons Multigrain Pancake Mix ( I use this ) 1 teaspoon Cinnamon 1/4 teaspoon Nutmeg 1 Tablespoon Pecans, chopped 1 scoop Vanilla Protein Powder Pinch salt 1 Measuring Cup or Microwave Safe Mug In a measuring cup or microwave safe mug, Mix egg, milk, syrup, banana and oil and combine thoroughly. In a separate bowl, mix pancake mix, cinnamon, nutmeg, nuts, protein powder and salt. Tip dry into wet and stir till combined. Nuke in microwave for 2 minutes*.

After the success of turning jalapeño poppers into grilled cheese sandwiches (aka the jalapeño popper grilled cheese sandwich ) I was wondering what other dishes I could turn into grilled cheese sandwiches. The basic idea is to take all of the flavours of a food that I am already totally into and use them in a grilled cheese sandwich. It did not take me too long to think of something perfect and it is interesting that it is also classic bar food, buffalo chicken wings, which are also one of my favourites. Buffalo chicken wings are chicken wings that are tossed in a spicy hot sauce and they are commonly served with a side of carrot and celery sticks with a blue cheese dip. I knew exactly where I was going to start with the buffalo chicken grilled cheese sandwich and that was with a quick buffalo chicken salad.

Cut off the root end of each pearl onion and make an "x" with your knife in its place. Bring 2 to 3 cups of water to a boil and drop in the onions for 1 minute. I love lemon curd, which is almost always made with lots of sugar. Use this sugar-free version on a low-carb muffin , pancake , or biscuit . Fresh lemon juice tastes best, although an organic brand available near me (Santa Cruz Organic) is almost as good. Other bottled lemon juice I've tried doesn't taste as good. Lemon zest adds even more flavor for almost no carbs, but I like smooth lemon curd, so I don't use it.
