I was not too excited to go abroad for a relaxing trip because I still believe that we have plenty of beautiful places to explore in our own country. Though for work and for passion I have traveled extensively in and around some parts of India yet there’s no dearth of beautiful destinations in India. But hubby wanted to go and his point was that he would mostly be not reachable by his office (liar) and could finally relax the way he wanted. But the time I touched ground in Bangkok I fell in love with the city.

Warm and cozy like my own country yet different and developed in many ways. The aspect that I loved most of Thailand is its people. Another thing I fell in love with is their sense of beauty and aesthetics. Thailand or Bangkok more specifically is a cosmopolitan city in all its true sense. There are plenty of things to do and everything is very very convenient. Basic Thai style stir-fry recipe Ingredients: Onion: 1 medium Salt. Quick and Easy Pad Thai. I’ve probably made pad thai a few dozen times, with several different recipes, and ultimately the main thing I got from all those experiences was: “Making pad thai is a pain in the neck.”

Quick and Easy Pad Thai

I always used a ton of ingredients, made a giant mess (although, to be fair, I make a mess doing most things), and it never even came out as well as I would have liked. But, my friends, the day has finally come! I have figured out a pad thai recipe that is easy, consistent (I’ve made it four times already), tastes like what I’ve gotten at good Thai restaurants, and all without using fish sauce. I’ll confess one secret to this being easy is to use a bag of frozen stir-fry vegetables (I use the one from Trader Joe’s) – you could of course use fresh but the effort of finding, buying, and chopping all those different ingredients would take this out of the “easy” category I’m so happy to put it in.

I don't know why it's taken me so long to get to this recipe in my quest to update my older recipes with better photos, but I first made this recipe in September 2005. Maybe it's because the original version was made with celery instead of peppers, which certainly made the dish a lot less colorful. When I decided to update this I switched the celery for a mixture of red and yellow peppers, and also changed the cooking sauce a little so this could be a phase one recipe.

I couldn't resist adding a tiny bit of Sriracha to the sauce as well, but that's totally optional. Actually you could switch out any of the vegetables here for something else and come up with a dish that's pretty good as long as you cut the pieces the same size and shape and pick veggies that cook quickly. There are so many variations of stir-fry and they do not have to include rice as the starch. Although we eat our fair share of rice (at least 2-3 times per week), change and variety are always welcome to spice things up a bit! It’s easy for Chris and I to go through time periods eating similar meals each week but starting this blog has really encouraged me to try new recipes that have been on my “must-make” list for a while.
