I actually got a chance to try a cauliflower crust a couple of months ago but I ran into a problem, the crust stuck so badly to the parchment paper that I could't get it off. What bits that I could get off tasted great though so I was determined to get it right! After hours of going through comments on various cauliflower pizza crust recipes the secret seems to be that you need to squeeze out as much of the liquid as possible from the cooked cauliflower before baking it.

Even though I have young kids, we are working on potty training, sharing, walking and just staying safe :) Toddlers are such a crazy and fun age! Eighties in October! In sync with this crazy weather, I’ve been particularly inspired to cook and bake. I’ve been trying new recipes, re-working old recipes, and overall spending way too much time in the kitchen considering how hot it is! I’m hoping that with this squash soup I will be ready to take a (brief) rest from my stove-top hovering, at least until the weather cools down slightly. These Quaker granola bars are just about my favorite snack and I’ve been eating them my whole life. I like them because they are soft and chewy and not hard and tooth breaking like other granola bars I’ve tried. I also like the rice cereal in them because it makes them seem more like Rice Krispy treats with granola in them rather than boring old “healthy” granola bars. These granola bars are so easy to make that I deviated from the original recipe to recreate my favorites: peanut butter/chocolate chip, s’more, and oatmeal raisin. Each recipe makes enough granola to fill a 9×13 11×7 inch pan, about 18 bars. Wednesday Not-Baking. I saw this recipe on Money Saving Mom‘s menu plan last week, and decided to give it a try.
As I said yesterday, I’m sort of a slacker when it comes to making homemade desserts (especially in the summer when I don’t much feel like turning on the oven), but this looked so easy, I thought even I could get motivated to make it. The first batch I made was just ok…it had sort of a weird flavor, and after a bite or two, I realized that the problem was a super-strong vanilla taste. The recipe called for two teaspoons and that much vanilla in an unbaked product produces a really unpleasant vanilla overload. So, for the next batch I made, I reduced the vanilla to 1/2 teaspoon, and the results were waaay better (and cheaper, too! Vanilla’s kind of expensive). This recipe is fairly customizable…you can use any type of nut butter you like, and you can vary a number of the other ingredients too.
