Ebelskivers. June 22, 2011 | Sweet Recipes | Comments I have a new minor obsession, ebelskivers! I’ve had the pan sitting in my cupboard for a year now. A few weeks ago, I finally decided to break it out and have my try at these little pancake balls. I even used the box mix from Williams-Sonoma because I was so nervous these little guys wouldn’t turn out. Lo and behold… I filled them with some chocolate fudge and they were the perfect little pancake balls I was hoping for! The Sonoma mix is very good and pretty simple to make. 1 tablespoon batter over melted butter A little bit of chocolate and then another tablespoon of batter on the top! Turning the ebelskivers is the fun part!

I was prepared for the information, I was NOT prepared for writing. I didn’t realize how I really don’t write any more. Yet, I’m one step closer to graduation and now I have time to write a blog post! When I saw Joy the Baker’s Cinnamon Pull-Apart bread I drooled and drooled until I finally found enough time to make a version of it. I then remembered making fantail rolls for mother’s day and decided to merge everything together. Baking in mason jars is all the rage right now. There are cakes, cupcakes, and the like around the blogosphere. So I thought why not make bread in a jar? Better yet, why not monkey bread in a jar. I love the idea of having individual servings so I baked mine in 8 ounce mason jars. I am a canner, so I have mason jars around the house, if you do not, you can easily pick them up at your local big box store {like Walmart, etc.}
A few tips: You’ll want to be sure that the jars have been thoroughly cleaned prior to using and that you spray them well with cooking spray so the monkey bread easily comes out. Also do NOT overfill the jars or they will overflow. These take minutes to prepare and are a fun way to get the kids involved in cooking their own special breakfast or dessert treats! Aside from the watching the cherry blossoms burst open and the hummingbirds make their annual arrival, one of the pleasures of spring is biting into a fresh strawberry.
I am not talking about those pale red specimens that mope on the shelves year-round, tasteless and scentless. No, I am talking about the local strawberries that are available at the height of spring, that smell like tropical flowers and are sweeter than any chocolate dessert. To me, strawberries epitomize spring and the rejuvenation that the season brings. The Strawberry & Goat Cheese Green Salad that I make last week was a good start, but I was itching to work it into a dessert, such as this Napoleon. Puff pastry is one of my favorite ingredients to work with, both for appetizers and desserts.
Cream cheese is enhanced with cocoa and sugar to make a creamy filling for the Napoleons. The recipe: Puff pastry: Preheat oven to 400 degrees F. Makes 6 Napoleons. Printable recipe. It started out as an “I-don’t-have-eggs” funk and quickly turned into a “I-haven’t-blogged-all-week-so-why-start-now” funk. It happens. But I made these doughnuts to make up for it! I’ve been dreaming about these forever now.
A cakey peanut butter doughnut with the kind of glaze that all the doughnut places use, that kind of crusts over after it sits for awhile and gets even better. They turned out just as I’d hoped – no, better since I had Reese’s Pieces on hand to sprinkle on top! Obviously not the kind of breakfast you’d want to serve everyday, but this was the perfect Sunday treat for my boys!
