This is a temporary website of Cafe Besalu, small family bakery in Seattle's Ballard neighborhood, and possibly the best croissant bakery on the entire American continent. Some may dispute this statement - indeed, it is impossible to taste all the croissants baked in the United States alone. However, it is safe to state that Besalu's owners James and Kaire Miller lovingly produce croissants and pastries that would rank among the top in Paris. Lines for Besalu pastries and coffee are often long, but people patiently wait in pleasant anticipation as the smell of pastries, freshly pulled out off the oven, fills the air. James and Kaire love what they do - watching them work is as mesmerizing as the flavor of their products. The fame of Besalu croissants spread slowly, but surely, by word of mouth.

Café Presse is located on South Capitol Hill in the Seattle University neighborhood. The second collaboration of Le Pichet owners Joanne Herron and Jim Drohman offers full coffee service featuring Caffe Vita coffee and house-made pastries; affordable wines from the French countryside; a full bar open until 2am everyday; and a menu of casual Parisian café classics. The newsstand at Café Presse offers a wide selection of magazines and newspapers. Weekends at Café Presse mean soccer from America, Europe and around the globe in the bar. Easy Street Cafe
Toulouse as a dining, lounge and experiential possibility was inspired and built around notions larger and more expansive than any particular theme or region: unique and lusty cuisine that requires discipline and skill to prepare; texturally rich and intricate décor that can only have been designed and created by individuals who approach their craft with focus and commitment; and the general desire to deliver the various possibilities of dining, drinking and adult escapism to others in a way that is positive safe, friendly, values-driven… and which leaves everyone better off for having had the experience. Toulouse is of course also centered around the cuisine, décor and imagery of the French Quarter of New Orleans. But our choice of this genre in particular is as much about what it allows…as it leaves open.
