Red Quinoa with Butternut Squash, Cranberries and Pecans. Jewels + Red Today's recipe is perfect for Fall. It's a beautiful red quinoa recipe I tossed together one weeknight, featuring roasted butternut squash, cranberries and pecans. Classic Autumn flavors. Gorgeous color. Serve this as a colorful vegan side dish. Or stuff a vegetable (it would be fab and hip served in roasted bell pepper halves).

Red quinoa has a milder taste than the standard quinoa. I suspect you'll convert to quinoa love. Karina's Red Quinoa Recipe with Roasted Butternut Squash, Cranberries and Pecans Recipe originally published January 2010. Mango Coconut Chia Pudding. I'm addicted to coconut, when I was pregnant it was all I craved! Combine that with mango and I'm in heaven! ...and using chia seeds to make an easy, healthy form of pudding which requires no cooking? Genius! Chia pudding has a sort of tapioca texture, you simply combine all the ingredients and refrigerate overnight. The little tiny chia seeds when soaked in liquid expand to more than 4 times their size!

Tested this pudding out on my pickiest family member, my teenage daughter Karina and she LOVED it to my surprise, she usually puts her nose up at some of my healthy creations. What do you do with your chia? Ingredients: Combine all ingredients in a large container. Divide into 2 bowls or glass dishes and serve. Welcome to The Epicurious Cooking School. My mom might be one of the only moms who didn’t ever make our meals in the crockpot, in fact, I don’t even know if we owned one… This is not to say my mom was a some sort of chef, on the contrary, my friends.

One day a week she made a trough of pasta, left it on the stove, and all week we dished out our meals worth (I always drenched mine with butter and parm, yum!). It’s no wonder I EVER learned how to cook, no really, it’s actually a miracle! Cooking in general, let alone in a crockpot, was preeeeeetty much foreign to me and I had a total fear of the crockpot. I know, it’s a stinken crockpot, scared of it, really JULIA!

But it’s the truth, I didn’t totally understand how they worked. This last year though I’ve sort of fallen in love with the crockpot, and it all started with this chicken. I made this chicken sandwich last fall for a wedding because I wanted to make a somewhat untraditional ‘wedding chicken’ dish. Summer is here. Notes: BBQ Beer Chicken, in the Crockpot! Ingredients.
