We’re going to start with a .gif, If that isn’t enough to make you start weeping ..yeah. I think when it’s exam time, my body goes into full on crazy-food drive. Last year it was the cinnamon roll pull-apart bread. This year. These. A complete 180 from those classy, intricate croissants. But then I transformed into a cookie bar, and layered with peanut butter and chopped peanut butter cups too. Yesssssssss. When I made these, I think that I just needed some soul food – and I’m pretty sure that these bars are what it would look like if I had a soul, I’m joking. Obviously it would be cinnamon-sugar toast. (p.s I’m kidding about the no-soul thing…) My friend and I ended up spending a good amount of time talking in Napoleon Dynamite quotes this week, (and yes, yes we’re learning his dance) in case you were wondering about that youtube clip above…….

Notes: S'more Cookie Bars. Better than being around a campfire! Now don't get me wrong, I think making s'mores around the campfire can be a ton of fun, but why go through the hassle of planning a camping trip or finding firewood if you can bake up a batch of these beauties without all the trouble. I saw this recipe on Baking Bites and could not wait to make them. I followed her recipe with the exception of using dark chocolate instead of milk chocolate and they were amazing! I brought these into work on a Sunday when there were only 7 of us there (I am an auditor so I often work weekends) and by Monday morning there was only one left. These are definitely going to be a "go-to" dessert going forward. S'more Cookie Bars

Keith, Andrew, and Kramer all ate at least two of these the other night. I brought some into work, too, and they quickly disappeared. They seriously tasted just like a s’more, and they should, considering that all of the same ingredients are used, just kicked up a notch! The crust is a graham cracker cookie, topped with marshmallow, a layer of chocolate, and a graham cracker crust to top it all off. These bars are sure to wow everyone that tries them! What you’ll need. Pulse about 8 graham crackers in a blender or food processor to get your graham cracker crumbs. Mix together the flour, baking powder, salt, and graham cracker crumbs.

Cream together the butter and sugars, until light and fluffy (at least 3-5 minutes), then beat in the egg and vanilla. Gradually mix the flour mixture into the butter mixture. Press half of the dough down into the greased and/or lined 8×8 pan (I doubled it and did a 9×13). Lay the chocolate bars over the dough. Enjoy! S’more Cookie Bars. It just wouldn’t be right to celebrate National S’mores Day without making a couple of s’mores – or at least using the concept of the s’more as a jumping off point for something equally delicious.

S’more Cookie Bars

This bar cookie is a variation on the classic s’more. Instead of sandwiching marshmallow and chocolate in between two graham crackers, or even between two cookies, the fillings are baked right along with the cookie dough. The result is a bar with the gooey, sweet filling that we all know and love and a buttery, chewy, graham-flavored cookie surrounding it. It’s obviously a s’more, but I’m willing to bet that you haven’t had a s’more that tastes quite like this before. The dough is a fairly standard cookie dough, but graham cracker crumbs are added in to give it a graham cracker flavor. Speaking of the marshmallow, the puffed kind doesn’t hold up inside this bar cookie.

Preheat oven to 350°F. Makes 16 cookie bars.
