Well, that’s not entirely true. She actually came over so we could have a little champs and have some girl talk, but we were in the kitchen and making a bunch of food to soak it up, and she had wanted to show me how to do it. She brought some spinach and pancetta as well, and whipped up this beautiful salad for lunch. Isn’t that gorgeous? So simple to make as well. So, how to poach an egg? Alright, so we are going to crack an egg into a small bowl or ramekin. Grab your tablespoon of vinegar and stir it into the hot water. Poaching an egg Once the egg is ready, remove with a slotted spoon. While poaching the egg, fry up some pancetta and then toss with a hearty helping of spinach, chopped shallot and red wine vinegar.

Place your poached egg on top of the salad and crack that sucker open. Do you see what I did there? I made it official, which means that you need not feel any regret that you may have innocently come upon a lonely wedge of leftover pie in the fridge this morning, and before you knew it, before you could responsibly hash out the pros and cons of setting your day to the tune of pie, and not, say, a muesli, fresh fruit and herbal tea detox, you in fact did have pie for breakfast and it was wonderful. You need not feel any regret because it’s a holiday, and it was important that you joined in the celebration.

For the corn, you can roast the corn on the grill, or if you are lucky enough to live near a Trader Joe's, they sell roasted frozen corn which is such a convenience.
