I’m having dreams of these apple-y, bacon-y, cheesy breakfast bites. I’d say my dream life is winning right now. If you haven’t noticed, breakfast is a big deal around here. There was a time in my tween years when I would skip breakfast or just eat one of those measly chocolate granola bars that are like 100 calories and I was always SO CRANKY in the mornings (this could also be attributed to the fact that I was a tween, but I think the non-breakfast-eating was a factor). Since then I’ve learned that the most important meal of the day needs to be a part of my life, and I’ve been trying to perfect it ever since. You see, a bowl of cereal just won’t do it for me. What I love about these lil’ bites is that they are a little sweet, a little salty, a little cheesy and full of protein and other goodies.

I have no idea why, since muffins are really an excuse to eat cake for breakfast, and I love anything that lets me eat cake at all times of the day. My main issue with muffins is that I find them hard to photograph for some reason. I know, that's not really the most legitimate reason to avoid making delicious muffins and getting the opportunity to eat cake for breakfast, but I'm pretty sure that deep down, that's the real truth.

Packed full of healthy ingredients (and cheese) they’re totally customisable to anything you have on hand. And they’re super tasty. Sorry I haven’t made a post in a while – I’ve been busying myself with non-kitchen activities. And I know, I completely skipped over valentines day. Which should have been the perfect excuse to cook something absolutely dashing. And I did – but it was caramel slice, which is a heart-warmer any day, but I was loathed to post it twice up here. I had a lovely valentines day though, with an sun glazed picnic on one of Auckland’s beaches – not one of the metropolis based ones, that become crowded with sticky fingered children and cigarette butts, but one a bit further north, in the middle of a nature reserve.

So we ate cupcakes and rolls with chicken-flavoured ham and drank caffeine-free coke out of sandy orange cups.
