I have been cooking, cleaning, and wrapping all day – there is glitter everywhere! What is it with glitter? Why is it on everything! Today, after wrapping gifts, I literally sparkle. (which is kinda cool if you are a Rockette, which I am not, in case you haven’t noticed). But, I do like Granola, and I do like this recipe! Trader Joes is your friend for this recipe. I’m thinking my xxxxoooo’s are gonna love this little Christmas gift! Coming up in January – 5 Week Anti Inflammation Diet!

Gingerbread Granola Ingredients 4 cups rolled Oats (not quick cook type)½ cup slivered almonds1 teaspoon cinnamon½ teaspoon salt1 teaspoon ground ginger½ cup olive oil⅓ cup maple syrup¼ cup molasses (or honey if that’s all you got)⅓ cup dried cranberries⅓ cup diced candied ginger. The idea of making granola used to intimidate me, and (surprisingly) it wasn’t until only recently that I made my first homemade batch of granola…. and you know what? It was amazing. So SO much better than anything I have ever bought at the store! Know what else? It was E-A-S-Y. . … I love it mixed with a little plain yogurt and fresh fruit! … but you could of course just have it with some milk (or soy milk, rice, hemp, etc…) …. or eat it by the handfulls right out of the container like I do! Ok, these photos are making me hungry! Ingredients: makes about 6 cups of granola 3 cups rolled oats1 cup rye flakes (or add more oats)1 cup coarsely chopped macadamia nuts (raw or roasted, but not salted!)

Process: Heat the oven to 300FIn a large bowl, combine the oats, rye flakes, nuts, seeds, dried fruit, cinnamon, and brown sugar. You might also like: Grain-free Strawberry & Goji Muesli. While you may think making a choice of breakfast cereal or muesli in the supermarket aisle is difficult, it’s even harder making the choice of ingredients for your own home blend.

You could make a million different mixes depending on what’s in the pantry and it can be quite hard to constrain yourself to 5 or 6 add-ins at times. My favourite off-the-shelf mueslis have always been filled with big chunky pieces of nuts and dried fruit. At home my own combos have become quite similar, great texture and taste with plenty of nuts, seeds and other wholefood ingredients. I make muesli depending on what I have on hand at the time, and now what I have growing in the garden. It’s much more inexpensive and flavourful compared to store-bought and breakfast is a bit more enticing when looking forward to your own personalised breakfast blend.
