Holiday Baking: Mexican Hot Chocolate Cookies. Graham Cracker S'mores Cookies. Cookies and Cream Cookies. Late August is an awkward time in the baking blogosphere – it’s a little too late for refreshing summery treats and definitely too depressing to start baking with pumpkin and apples quite yet.

So today we’re going for what I consider a delicious, timeless classic – Cookies and Creams Cookies. Timeless because they’re essentially season-less, classic in that apparently Oreo’s are America’s favorite cookie (I’m not arguing there), and delicious because it’s freakin’ Oreo’s mixed into a chocolate chip cookie base, what more can I say?! Sometimes there’s just no time for elaborate layer cakes or fancy jello shots. Sometimes I just want to throw together some ingredients, bake them for a few minutes, and have delicious treats with minimal effort. Stephanies Kitchen – Cinnamon Roll Cookies. There are days when everything goes perfectly in my kitchen– when I’m surprised at how easily a recipe has come together, there are no crazy set-backs, the food tastes great and is insanely photogenic, and the sun has decided to be on my side for the day and the natural lighting is perfect.

Those days are rare, and they are never when I decide to bake. Never. I like to tell myself that “cooking is an art, baking is a science” in order to make myself feel better about my cookie/brownie/cake disasters, but when it comes down to it, I just am entirely inept when it comes to baking. I measure all of my ingredients out precisely, I follow directions, I research techniques until I am sure I have them down pat, but none of it ever seems to matter.

My cookies come out all sorts of strange consistencies, my cakes sink, and my brownies remain partially liquified no matter how long I leave them in the oven. To those of you who celebrate, I hope you’re all having a fun family-filled day or are planning to tomorrow. I’m actually typing this up Monday night. My kiddos went with their grandparents to “The Christmas Carol” and will be going back home with them to work on yet another gingerbread house and spend the night. This is another tradition and it makes it very nice for me because I’m able to get last minute wrapping and other odds and ins done. If you’re not all cookied out, I have one more for you before the BIG day. No Bake Oatmeal Cookies with cocoa and peanut butter I don't know of anyone who doesn't just love these cookies! Sugar cookies, gingerbread cookies, peppermint cookies, hot cocoa cookies…so many cookies to choose from, so little time to cram them into my mouth. Nom nom nom, cookie cookie cookie. In my family, the only type of cookie that matters this time of year is thumbprint cookies with strawberry jam. Not raspberry, not blackberry, not (shudder) orange or apricot – STRAWBERRY. Cuz, you know, strawberry jam is red, and red is festive (raspberry jam is also red, but it’s not as delicious so why bother?). These cookies really are amazing, though. I ended up making two batches because the first time the cookies spread out and they aren’t supposed to. The reason that happened was because I didn’t let the cookies chill in the fridge for an hour.
