Since I do have all the Christmas presents since Saturday (yeah for me! 10 days before Christmas?! That never happened before!) Zimtsterne (cinnamon stars) Maybe I wasn’t being completely truthful last year when I exclaimed that the almond and currant cookies of my youth are my favorite.

In reality I’ve always loved Zimtsterne most of all. As a little girl cinnamon stars represented the very promise of Christmas. The sweet tinge of icing an irresistible finish to the chewy bite. Nutty. Not too cinnamony. This is another recipe my mother has kept alive all these years. This is loosely adapted from an old recipe that originally appeared in The New York Times. It calls for vanilla sugar, a blend of confectioners' sugar and the seeds from a vanilla bean. The mixture keeps indefinitely and is wonderful sprinkled over French toast or berries. Preparation Using a small, sharp knife, split the vanilla bean lengthwise and scrape the seeds into a small bowl. Position a rack in the upper third of the oven and a second rack in the lower third then preheat to 350°F. Using a food processor, grind the walnuts into a chunky paste then transfer to the bowl of a stand mixer fitted with the paddle attachment.
