But I think this is one of those recipes that a lot of you are going to like, and I'm feeling the need to share it with you now rather than later. It came together as I was riffing off one of Lora Zarubin's recipes from I Am Almost Always Hungry - her Potatoes with Tomato Curry. I love an all-in-one-pot meal, and was cobbling together a hearty, vegetarian version of her recipe with tempeh. It wasn't at all complicated, just an onion sauteed with a short list of spices, diced tomatoes, a splash of cream, and eventually potatoes and tempeh. I have to microwave my lunch at work, so metal containers won’t work and heating up plastic has me worried. We often simply fill mason jars with leftovers, but sometimes it is fun to come up with a clever jar lunch and make a big batch. Lunch for the whole family is already packed. Shepherd’s Pie is already Irish, but this vegetarian version adds bit of Guinness and is topped with colcannon instead of plain ol’ mashed potatoes. Colcannon is a traditional Irish dish with cabbage or kale in mashed potatoes. This recipe can easily be made vegan with non-dairy margarine and milk & forgoing the optional cheese. I've been pinning all kinds of recipes to my "yum" board in preparation. This one was first on my list. There's only two ingredients. That's right, just the cake mix and the pumpkin (15 oz.). No oil, no eggs, no water, nothing else. It felt kind of strange not to add any liquids to the mix but it came together nicely into a thick batter. Bake at 350 degrees for 20-25 minutes. Add a dusting of powdered sugar, or better yet some homemade cream cheese frosting for added awesomeness. Yum! *Update* Made these with chocolate mix too. Two-Ingredient Lemon Bars.
