We love to experiment to see what we can make in our own kitchens with a little research and ingenuity. There will likely be many disasters along the way, but a successful final product is so exciting and satisfying: it's much better tasting, and less expensive, than its grocery store counterpart. Living in a college town, once school's back in session, it's as if the city has come back to life again, with hoards of backpack-wielding students roaming the sidewalks and pedaling on their bicycles to class. So, though it's nice to be a part of the lively city every once in a while, it's also nice to stick around at home where you don't have to worry about finding a parking spot or missing your dinner reservation. And the pockets would be a nice addition to a party spread, brunch or even dinner. Wanna see how easy it is? You’ll need cooked turkey (or chicken), black pepper, poultry seasoning, seasoned salt, dried rosemary, cream cheese, and canned croissant dough.

Begin by softening the cream cheese in a bowl. Add the seasonings. Combine the seasonings and cream cheese well. Next add the turkey (or chicken) and combine well. At the time, I was sure that she was killing her kidneys with her excessive salting. After graduating from both school and my homemade meals of grilled cheese and pasta with runny marinara sauce, my opposition to salting slowly began to whither away. Today, I salt nearly everything — tops of cookies, soup that already contains my entire daily allotment of sodium, butter I smear over warm slices of bread, and that poor incredible edible egg (ideally one that hasn’t been recalled). A year ago Brandon had just gotten a job here and we were preparing to make the move from Florida to Virginia.

I cannot tell you how much happier I am in Virginia and the main reason for that is because of Fall (and Winter, Spring and even Summer). There are actual seasons here! Maybe I’m strange for being so affected by the weather, but I found the static-ness of Florida’s temperature and landscape to be utterly depressing (I probably would’ve felt differently if we had lived closer to the ocean, which I love, but unfortunately we were right in the middle of the state).
