Day 68. While making my blog rounds the other day, I came across this spectacular broccoli beef dish on Erin Cooks. I was immediately intrigued by the idea of translating it to the crockpot. I didn't have all the ingredients on hand that Erin used, but was able to put together a very tasty rendition of an Asian-inspired broccoli beef that is gluten-free, and doesn't leave you feeling like you just ingested a tanker full of oil. The Ingredients. --1 lb thin beef (I used rib eye) --1/4 cup soy sauce (La Choy and Tamari wheat-free are gluten free) --2 T white wine --2 T apple cider vinegar --1 T brown sugar --2 t sesame oil --2 cloves smashed and chopped garlic --1/2 t crushed red pepper flakes --1 bag thawed broccoli florets (to add later) The Directions.

For the rest of you, this is a scrumptious and (dare I say it) gourmet crockpot meal. The Directions. Make marinade out of the wine, soy sauce, worcestershire sauce and garlic. In the morning, dump everything into the crockpot. Slice your blue cheese into strips. One at a time, take the meat out of the marinade mixture and place strips of the cheese all over it. Roll it up. Cover and cook on low for 4-5 hours. ACK! Basil Chicken with Feta Slow Cooker Recipe. I'm sitting here munching on cold chicken (because it even tastes good cold!) While I'm typing. Adam and the kids are in the front room watching Star Wars (I don't know which one--- the one with the little Ewok guys) and I snuck out of the room to share our dinner.
Because you need to make this. We've begun growing basil for the first time (well, we've tried growing basil before, but this is the first year it's actually producing instead of withering up while glaring at me). I'm pretty sure the difference between this year's basil bounty and previous crops are the gnomes. And maybe that I'm remembering to water. The Ingredients. serves 4-6 (4 grown-ups, or 2 grownups and a handful of kids) 2 pounds chicken thighs (mine were boneless, skinless) 1 (14.5-ounce) can fire roasted tomatoes 1 (14.5-ounce) can garbanzo beans, drained and rinsed 1/2 cup pitted green olives 1/4 cup tightly packed basil leaves 8 ounces crumbled feta cheese The Directions. Use a 4-quart slow cooker (I used this one). Salsa Chicken and Black Bean Soup. My kids each ate their weight in this soup. It smelled delicious while cooking, and tasted even better. This is a brain-child of Natalie, who emailed me early last week.
The neat part about this soup is that she (and then I did, too!) Used dry black beans instead of canned or pre-cooked dried beans. The beans will take a super long time to soften, so this is a great candidate for those who are out of the house for long periods of time. Thank you so much, Natalie! The Ingredients. --1 pound chicken (I used frozen breast tenderloins) --1 cup dried black beans (or 2 cans, drained and rinsed)--4 cups chicken broth --1 cup sliced mushrooms--1 cup frozen corn --1 jar prepared salsa (16 oz)--1 1/2 tsp cumin --1/2 cup sour cream (to stir in at the end) --shredded cheddar cheese, avocado slices, cilantro (all optional) updated 12/15: Pace salsa is pictured in the ingredients.
