Lemon-Blackberry Cheesecake. Frozen Pina Colada Pie. Do you remember way back when the Food Network first started? I think it was called TV Food Network back then. I remember being thrilled that there was a channel dedicated to all things food. Oh the recipes I'd gather and since I had a computer back in the early 90's, I didn't have to sit in front of the TV with a paper and pencil in hand feverishly trying to write down the recipe. I could go to the internet and copy and paste and shazam - I had me a recipe. This was one of the first recipes that got from TV Food Network. I can't remember the name of the show. This is a fantastic summer dessert. It's cool, fruity and creamy all at the same time. Frozen Pina Colada Pie4 ounces cream cheese (softened)1 cup sweetened condensed milk½ cup pineapple juice½ cup shredded coconut3 cups whipped topping, divided½ cup crushed pineapple, drained *see tip1 large graham cracker crust ** (yup another tip) Combine cream cheese, milk & pineapple juice and beat until thoroughly mixed.

Pina Colada Dip. . Hello all! I hope everyone had a wonderfully romantic Valentine's Day. Well, for those of you who wanted a romantic night, I guess. My V-Day was actually much more exciting than I planned, but that's always a good thing! So long story short, I showed up at Robbie's work [with a cheesy bear, caramel apple, and box of chocolates in hand] and took embarrassment to a brand new level. So now that V-Day is over and I'm guessing many of you have had your fair share of chocolate candy [I know we have!] Ingredients: 1 (8 oz.) package cream cheese, softened 1 (7 oz.) jar marshmallow creme 1 (8 oz.) can crushed pineapple, drained 1/2 c. sweetened flaked coconut Various fruits, crackers, or cakes to serve Directions:In a small bowl, beat cream cheese and marshmallow creme until fluffy.Fold in pineapple and coconut.

A few important instructions: 1) Cube the sweet tater into ~1” cubes, for best texture results. Steam or microwave until tender. Leave those skins on!! Cubing will make the mashing easier + help with the texture. 2) For the beans. 3) Quinoa!
