I’m really looking forward to it! In the meantime, because it’s Friday, I’m bringing this, one of my all-time favorite recipes, up to the front. It’s cool, easy, and the perfect thing to get us through the remaining days of this inferno some humans are referring to as “Summer”. Sometimes, simple is best. Often, simple is best. Most of the time, simple is best. Sesame noodles fall under that umbrella. This is a very simple recipe for yummy sesame noodles.

And it’s so much quicker, tastier and healthier than take-out! Back when I had a day job, I had this boss who was obsessed with the lo mein from the restaurant across the street. She’d have me order it at least 3 times a week, and I would get so excited because she would always pass along a plate for me to share. But since blogging became a full-time gig, I find myself longing for that lo mein almost daily. Those long noodles chockfull of all those fresh veggies… How it was always so perfect with a side of potstickers. But surely enough, there’s a homemade lo mein version that can be made in just 15 minutes from start to finish with ingredients you already have on hand. Best of all, you can clean out the fridge with all kinds of lingering veggies and you can also add in your favorite proteins! The easiest lo mein you will ever make in 15 min from start to finish. I know this is a little weird to admit as it’s really not at all healthy and I wouldn’t ever make it for my kids after school, but I might as well let you in on my life.

So here goes, at least 3-4 times a week when I would get home from high school I’d make myself a teriyaki chicken quesadilla or burrito. I know, dinner was only a few hours away and most kids were having a snack but I was having a full on meal. But it was good, it was real good. Spicy Hoisin-Glazed Zucchini. Wash the zucchini well to remove any grit and dry them with paper towels.

Trim off the ends and quarter the zucchini lengthwise. Slice off the top 1/4 to 1/2 inch of the soft seed core by running a sharp knife down the length of each quarter; it’s all right if some of the seeds remain. Arrange the zucchini, cut side up, on a baking sheet lined with paper towels. Sprinkle with 1/2 tsp. kosher salt and set aside for 10 minutes. Blot the quarters dry with the paper towels. In a small bowl, mix the soy sauce, hoisin, sherry, and sesame oil. Serving Suggestions.
