Devour these Cannoli Bites. That is all I have to say. Okay not really all I have to say because these are my dream dessert, I have such a soft spot for Italian and French pastries so, really I have plenty to say about these. First of all, the cups for these are made from a cannoli dough (I made it a bit thicker than I would for a cannoli shell that would be wrapped around a flute and fried, simply so it could hold it’s shape a little better). The cups are baked in mini muffin cups, not fried. If you have sweet Marsala wine on hand you can use that in place of the juice and vinegar (so just omit both of those and replace it with 1/2 cup Marsala wine). One year ago today I reluctantly started this blog looking for a creative outlet for all my crazy baking and cooking shenanagans (thats the best I can do with the spelling of that). I may not have 698+ blog followers and fancy pictures like many of the great blogs out there but I am still pretty darned proud of this thing and very thankful for the 108 of you that do follow...it makes me :) lots! Anytime I bake peanut butter blossoms or mini cheesecake cookies, I imagine being about 8 years old, in the kitchen of my old house, watching my mom bake. I can feel the carpet under my toes, I can see the floral painting on the wall, and if I walk around the corner, I can see the silver and blue garland wrapped around the staircase. There are certain recipes that flat-out have to be made during the holidays, or it’s just not Christmas. Then there are cookies and treats that have been made occasionally, but somehow fall through the cracks some years. Since Little Buddy was just a wee one, we’ve been making these peanut butter bars together. He’d sit on the edge of the counter, swinging his feet as we poured all of the ingredients for the peanut butter base into a large mixing bowl to mix it all together.
