Nevertheless, they cause a high burden of disease in humans, may have prolonged, severe, and sometimes fatal outcomes, and result in considerable hardship in terms of food safety, security, quality of life, and negative impacts on livelihoods. The transmission routes for food-borne parasites are diverse. They can be transmitted by ingesting fresh or processed foods that have been contaminated via the environment, by animals or people. Additionally, notification to public health authorities is not compulsory for most parasitic diseases, so official reports do not capture the true prevalence or incidence of the diseases, as much underreporting occurs. The spread of disease via food handlers is a common and persistent problem worldwide [13, 20]. Therefore, this study was undertaken to assess prevalence of intestinal parasites, among food handlers of Arba Minch University Student’s Cafeteria, Arba Minch, South Ethiopia. In this study, most of food handlers working in students’ cafeteria of Arba Minch University were females, young adults and had low educational levels; which is in line with studies from different parts of Ethiopia like Bahir Dar, Gondar town and Addis Ababa [13, 14, 21]. The overall proportion of infected female food handlers (22.6 %) with intestinal parasites was higher than the proportion of infected male food handlers (12 %).

La maladie est généralement contractée par ingestion du parasite présent dans des denrées alimentaires dérivées d’un de ses hôtes naturels (par exemple la viande). Les risques d’infestation par ces parasites sont d’autant plus élevés que les populations manquent d’informations sur le processus de contamination et méconnaissent les règles d’hygiène, que les pratiques d’élevage sont médiocres et que la gestion ou l’élimination des déchets d’origine animale ou humaine se font dans des conditions de sécurité sanitaire inappropriées. En dépit des énormes coûts sociaux et des impacts mondiaux, on manque généralement d'informations sur l'origine de ces parasites, la manière dont ils vivent dans l'organisme, et surtout, dont ils nous rendent malades.
