Veterinary Microbiology Volume 179, Issues 1–2, 31 August 2015, Pages 76–81 A new bovine conjunctiva model shows that Listeria monocytogenes invasion is associated with lysozyme resistance. Open Access Highlights We present the first bovine conjunctiva explant model for infection studies.
Listeria monocytogenes was isolated from a healthy bovine eye. 2 L. monocytogenes isolates were markedly less able to invade conjunctiva explants. Those isolates were also significantly more sensitive to lysozyme. Abstract Listerial keratoconjunctivitis (‘silage eye’) is a wide spread problem in ruminants causing economic losses to farmers and impacts negatively on animal welfare. Keywords Listeria monocytogenes; Silage eye; Keratoconjunctivitis; Ex vivo organ culture; Lysozyme resistance 1. Listeria monocytogenes is an intracellular pathogen which has been extensively studied as a cause of human food borne infections associated with a high mortality rate ( McLauchlin et al., 2014). 2. 2.1. TECHNICAL UNIVERSITY OF DENMARK 02/02/15 Predicting the shelf-life of cottage cheese. New mathematical models that predict the growth of listeria and lactic acid bacteria in different types of cottage cheese can be used by producers to determine the shelf-life of their products.
The models have been developed in a PhD project at the National Food Institute, Technical University of Denmark. The project results can also be used as a starting point for developing predictive models for microorganisms in other fermented products. Disease-causing listeria bacteria may be present in food. If the bacteria are present in large numbers in products that are not heat-treated before consumption, they can lead to the serious disease listeriosis. Although cottage cheese has not been linked to outbreaks or cases of listeriosis, cottage cheese producers must be able to document that their products comply with microbiological criteria for listeria bacteria. APPLIED AND ENVIRONMENTAL MICROBIOLOGY 14/09/12 Modelling the growth of Listeria monocytogenes in soft blue white cheese.
+ Author Affiliations The aim of this study was to develop a predictive model simulating growth over time of the pathogenic bacterium L. monocytogenes in a soft blue white cheese.
The physicochemical properties in a matrix such as cheese are essential controlling factors influencing the growth of L. monocytogenes. We developed a predictive tertiary model of the bacterial growth of L. monocytogenes as function of temperature, pH, NaCl, and lactic acid. We measured the variations over time of the physico-chemical properties in the cheese. Our predictive model was developed based on broth data produced in previous studies. . ↵1Corresponding author, Microbial Food Safety and Hygiene, Department of Veterinary Disease Biology University of Copenhagen, Stigboejlen 4, Frederiksberg C DK-1870, Denmark.
