Le cadmium est cependant un métal cancérogène, pouvant causer des maladies rénales, osseuses et cardiovasculaires. Il s’accumule dans l’organisme, rendant dangereuses les faibles expositions chroniques. C’est pour cette raison que son utilisation a été fortement limitée par la réglementation européenne REACH. En dehors du tabac qui accumule particulièrement ce métal, l’alimentation constitue la principale source d’exposition des populations au cadmium via les céréales, légumes, racines et tubercules.
